- Sicilian Arancini are deliciously plump stuffed rice balls filled with ragu, peas, mozzarella and deep fried. Arancini are originally from Sicily and my version is simple to make and coated with fresh breadcrumbs making them extra crispy and simply exquisite.

Sicilian Arancini Recipe | Homemade Italian Rice Balls Recipe
INGREDIENTS:
RAGU
1 x can of Mutti Doppio Concentrato (Double concentrate tomato sauce)
150g baby peas
550-600g mixed pork/veal mince
1 carrot (chopped into pieces)
1 celery branch (chopped into pieces)
¼ onion (chopped into pieces)
4-5 tablespoons of extra virgin olive oil
A few pinches of table salt
Generous bunch of fresh basil leaves
1 glass of water
ARANCINI BALLS
1 fresh mozzarella ball (or Fior di latte)
500g Aborio rice
Thin slice of butter
¼ onion (chopped into pieces)
1 x vegetable stock cube
Fresh breadcrumbs in a wide bowl
1L water
Small bowl of water for your hands
2 eggs
Vegetable oil (enough for frying)
UTENSILS:
1 x medium size non-stick frypan
1 x medium pot for rice
1 x whisk or fork
1 x wooden spoon
1 x medium tray
METHOD:
Vincenzo’s Tip: Before starting to cook, place the empty tray into the freezer. You will use this to cool down the rice later on.
TO MAKE THE RAGU
1. Put the frypan on the stove at a medium-high heat.
2. Add 4-5 tablespoons of extra virgin olive oil along with the chopped carrot, celery and onion until it begins to brown, then add the mince.
3. Mix the meat through using a wooden spoon and turning it over until both sides begin to brown.
4. After a couple of minutes, add fresh basil by breaking the leaves into small pieces, peas and a glass of water.
5. Leave this simmering and once it reduces, add the Mutti concentrate and mix jut through.
6. Add a tablespoon of salt after 2 minutes and mix it once again.
7. Leave this to simmer on the stove on a medium-low heat for around 10 minutes.

When I was in the Navy I was stationed at Sigonella, near Catania. The ararcini were more cone shaped but the way you make them is the way that I remember them.
They’re sooo good 😋
I was stationed there in 2000-2002. I hear it's changed a lot since then. I miss the arancini but also the panini trucks in Catania.
i was stationed there too. there was a little vendor that used to be on NAS 2 near to the gate adn they had the cone shaped Arancini. and the Restaurant Medusa across from the base had them at one point. loved that the navy gave people such great experiences with different cultures.
@@mrs.littleneko5958 That must have been after I left, otherwise I would have been eating them every day lol. I left in 2002
@@christophermaggard6969 i was there in 2008 and i had them all the time. But the best ones were in Catania for sure
I'm so thrilled you posted this recipe. My neighbors are Italian and they brought this dish over and I loooved it. I'm so thrilled now that I have your recipe I will be able to make this myself now. It's so tasty and doesn't seem too difficult to make. Thank you so much for sharing your videos and recipe Vincenzo.
Why didn't you just ask the neighbor's? Socialize a bit people!

I really have to try these arancini..I want to make some for such a long time and your recipe is really helpful.
Messina
Palermo! Birth place of my Nonna. This recipe takes me straight to my childhood! My family love them too! Thank you bello vincenzo x x x x
There are many beautiful cities to visit in Sicily, but one l did enjoy a lot last time I was there is Cefalù. A beautiful coastal town with lovely food.
Wow Cefalù 😍
Once ended up there on a very stormy winter day - found this cute family run ristorante not far from the main church - gorgeous food.
My parents were from Trapani and I loved visiting there. I made Arancini with my mom as a kid and now that they have passed, so has the recipe. Yours is the closest to my mom's I have seen. I can not wait to make them for the family for Christmas. Thank you
This looks fabulous, and I can't wait to try it out. Thank you for sharing your technique!
Love Arancini! They look amazing! Can't wait to try the recipe, thank you for the video!
This video is amazing!! He teaches you all of the tricks to make the rice balls. They come out amazing every time!! Thank you for this video!!
I'm from Australia and I was in Sicily this June. Many great places but my favourite is the the ancient Greek Theatre of Taormina. Such an historic site with amazing views over the Calabrian Coast, the Ionian Coast and Cone of Etna. The way the the natural scenery is integrated with the architecture makes it truly special. Didn't know that arancini is originally from Sicily. It is very popular in Oz.
Sicily is wonderful, I know! And arancini are amazing 😍
Vincenzo this looks amazing!!! I have been exposed to a lot of Italian food but have never heard or tried this. Thank you for sharing this
wow I got obsessed with these when I was in Palermo few years ago. really love this video and will definitely try it. mille grazie!
My mother was born in Palermo, loved the arancine there and in Ortigia!
Wow Palermo 😍
My Sicilian mamma never put celery or carrots in her arancini . She also put some egg into the rice to help the rice stick better but the rest is spot on. Looks delicious. Makes me hungry.🤗b
Thank you a lot Anna, I have to try adding an egg!
Awesome! Looking forward to trying this out. Thanks!
Thanks for the arinchini demo. We just got back from Sicily and enjoyed arinchini in Erice, Poleromo and Villa Roma de Casallle. Loved them everywhere.
They look delicious! I’m going to try this even though I have failed in the past! My mother is from Rafadali, and I love Sicilia. I took my grandson to Italy and he loved arancini!
Never give up 💪🏻💪🏻 cmon my friend
Bravo! i'm going to try this One of my favorite places in Sicily is Racalmuto!
made these. they are delicious!! everyone loved them. will be making more soon. hold on to this recipe!!
I made these for my amici Siciliano ! He lives them! They were great! Thanks for the video!
My favorite place in Sicily is the Provence of Catania.
Cipollini Catanesi, and Aranchini are my favorite snacks.
Pair those with a cappuccino fredo on a hot summer morning and you got yourself a winning combo.
Mmmh, si good 🤤
Great demonstration and they look so yummy. I use to buy these for my kids 14 years ago for $1.50 each as a snack after school at the deli . Then our neighborhood gentrified and the price went up to $3.50 each a few years after. So we haven't eaten one in a long time. I'll have to surprise my teen boys with these. Anyone freeze and reheat these? They would make excellent school lunches if so.
Yes I have and they taste just as amazing
Yup... I was raised in Park Slop B'klyn and we use to buy these at the corner Bodega for a $1.25. I thought it was a Spanish thing. Guess not. Either way, they war always delicious!
Thank you for this recipe! I love these and will def try. I love Catania in Sicily. ❤️
Pls keep posing yummy Italian recipes...
I had my very first one in Palermo a few days ago!! So good I wanted to look up how to make one. Thank you for making this video!
I have never had these before but they look very tasty. I wanted to jump into my computer screen and taste that delicious recipe. Perfecto Vincenzo!
Superb!!! I made them last week, *****
*****, I have a Delonghi fryer, a spectacular Italian machine for frying that leaves no odor in the house because of a carbon filter incorporated. The arancini and any other food that you want to fry come out so crispy a delicious. Try a frittura di verdura mista o pesce fritto misto, Madonna che bonta!
Delonghi doesn't pay me a cent to say these nice things, but it's the best thing for frying without mess or odors, *****
I fondly remember the deliciousness prepared by a friend's Mom from Calabria: arancini and l'uovo sbatutto con caffè
Wow delicious 😋
hello from British Columbia , Canada . My nanno brought his family here , from Montelepre in 1955 . I miss my grandparents very much , but smile when I see videos like this ,because I would be there at their home , every Sunday for the day . All this food reminds me of happy times spent with them . much love to you for posting this video.
Oh ❤️ this is beautiful! Food always brings back great memories ❤️ thank you for your comment Giovanni!
Thank you for the recipe Vincenzo!
This is the first time I've seen these. They look wonderful. Going to have to make them. Thanks, so much!
Yesss tell me how it goes or you've just tried this recipe?
It’s been a year. Did you try it?
@@nomobties I hate to say, but no, I haven't. Still on my list, though.
@@howardbarlow578 you got time. Try Christmas. Shape them in the style of a Christmas tree aka triangle. My mom made this once a year and it was always at Christmas time. Great memories.
@@nomobties I can do that!
Subscribed! Haven't been to Sicilia but my friend is from there! I've been to Napoli only. Love Italia!
I did this arancini today, a real big success!!! Delicious!!!
That looked sooooo good! 😃
My favorite small town is Cefalu. It is a beautiful place, high up on a cliff so that as you approach from Palermo, you'll see the sea, sky, and the city perched above. It does has roadways down to the beach where the fisherman also keep their boats ashore. Definitely walk down to the beach to enjoy a different perspective. It is a spectacular view that you will never forget it's beauty!
I visited 37 years ago, I truly hope that it has not changed! That day, while walking down to the beach, I bought a wooden plaque for my mother. Which hangs in her kitchen still today. It says....
"Ci son piu fiori nel mi cuore per
mia madre che in tutti gli giardini."
Which in English says,
"There are more flowers in my
heart for my mother than in all the gardens."
At the time my US Navy ship was stationed in Gaeta Italy which is another must see destination! That is where I first had Arrancini. Walking along the water front road there used to be a place called Bar Hermes. They had great ice cream and granitas. I often got a sausage sandwich there from the small tavola caldo. This occasion I bought Arrancini and walked down the street eating it from the paper it was served on. No mess and was a beautiful, delicious, portable food.
I loved them!
I thank you for the recipe and of course, I liked and Subscribed!
Mille grazie e ciao. 🤠
Hi David, thank you so much for sharing! I think too Cefalù is a very nice place, I hope you can come back there one day! ❤️ thank you for the subscription
I love these, had my first one in Torino when i visited my brother.
Yummyyy
I love Sicily, Modica and Ragusa are my favorite places. Somehow I never tried the Arancini when I was there because I didn't know what it was but I'm loving it now and just made some for my block party, everyone loved it. Thank you for the post, it's very helpful.
When I went to Sicily, Arancini had to be my favorite food there. Just an amazing place and food.
Arancini is absolutely gorgeous ❤️😍 wow
They look soo good! I love arancini di salmone. Favorite place in Sicillia "la Vucciria" in Palermo the best food I ever had in my life!
Hi Marco🙈 yeah, I'm in love with arancini too. I've never tried salmon arancini but they are very interesting 😍
That is Arancini perfection my friend.
That is exactly the way I make it except for the fact that I have to use gluten free bread crumbs now and I don't have access to the Mutti tomatoes. Wow you did an incredible job with this.
***** Thanks Vincenzo. I just found the Mutti tomatoes at Amazon. You can find anything there.
amazon has Mutti and I googled where can I get Mutti and they listed stores near me
You can buy them in the USA! madewithmutti.com
Bravo Vincenzo. I learn a lot watching your cooking videos. Keep up the awesome work!
That's what I am talking about !
That is a job well done Sir !
You are a real Pro!...love them!
I will be in Italy in a few days and I really want to order this when I get there. Greetings from Puerto Rico.
Hi Rebecca, you can order a lot of arancini to take them in Puerto Rico🙈
Arancine are only made in Sicily. I advice you to take them only in Sicily. Even if they do them in Naples also, but they call them pall e ris (rice balls).
Seems like a great recipe for when there is leftover rice. Thank you for sharing your amazing creations with us. Yum!
Waaaait why did he like this when he specifically said don't use left over rice in his latest video lol
@@moona202 he just appreciate every comment in his channel maybe, that's why he keep spamming "love features" 😁. But for original recipe use fresh risotto that already chilled in fridge.
You're right... never thought of that.
i gotta do these,,,looks amazing
Thanks. This has become a family favorite
My favorite place is Taormina where my boyfriend is from. We are gonna make arancini together soon :) Thanks for recipe.
Wow Taormina is amazing!
whenever I go in Italy to see my Italian family, I get so excited to eat arancini from the shop outside the port terminal in Messina (Imbarco Traghetti Caronte di Messina). I really recommend you to go there if you go to messina
Thank you for the advice 😍 Messina is a great city
Beautiful recipe Vincenzo!! I have to try these soon! wauw!

Castellammare del Golfo and Scopello are beliissimi!
i live in Castellammare del Golfooo
Io vengo da Salemi e sono stato molte volte ha Castellammare del golfo .
San Vito lo Capo is my home town, we need to keep these treasures in the family and not sellout on youtube
I just love the passion that goes into Italian food. I don’t think there’s any other country that has as much pride and love for their food
Yes, I think the same!
true...fun fact..Italy invented the Cookbook..also Italy invented using Silverware...before that they used their hands to eat...Also, Italy invented using garnishes to make dishes pretty.. Yes, good food and a relaxed and beautiful presentation are very important to Italians
Oh my goodness that is the most delicious looking thing I have ever seen!
soooo nice rice balls recipe I really like it thank you
Favorite place in Sicily; Cefalu!
Delicious arancini! I love Taormina in Sicily. It is very picturesque. E ora si mangia Vicenzo's arancini! Thank you :)
Love Sicily, been there many times, from Capaci, Mondello, to Taomina. I left the love of my life there.
Sicily is all beautiful! 😍
I really love this recipe! I am so glad I found your page its awesome. Just subscribed.
mi hai fatto venir voglia di arancini
The town of Agrigento is still in my mind after a school trip in there. I saw the valley of gods (basically an ancient shopping center for prayers). But i went to restaurant where they made the best tagliatelle with lamb meat cream sauce.
Mmh, wow 😍
Thank you for sharing
I couldn’t stop eating them in Sicily... while sitting in a cafe on Mondello beach with a bottle or 2 of Birra Moretti or Peroni
It s yummy. Thank you I'll try it
Favorite location my belly,🤣🤣🤣
AHAHAHAH!!
😭😭😭 i second that location!
In real sicilian arancini we use only rice and saffron and sometimes a little bit of cheese like pecorino. Also we don't use eggs but a batter of water, flour and salt.
PS we don't use mozzarella because it has too much water, there are a lot of other cheese we use :)
These look like the napoletan arancini... you are right the sicilian arancini is from rice and saffron to give a very arromatic rice...and yes mozzarella should be replaced with another soft cheese like caccio cavallo that does not have a high water content... they look good though...i'm sure they're tasty!!
And saffron is currently costing more than gold...
According to my grandparents who were from Palermo, every family had their own version of recipes.. mostly went by what you could grow or afford to buy. So please don't say "real" Sicilian anything. It sounds demeaning, in a time where we should be more positive and encouraging
Thanks for sharing! 😄 It's amazing how food traditions can vary even within the same country. Sicilian arancini are definitely special, and I'm glad you appreciate the unique flavors and ingredients. Enjoy exploring the rich culinary heritage of Sicilia! 🌄🍽️
These were amazing. Grazie Mille!!
I did indeed.
These look so amazing. I am completely jealous. I was in Pescara one week ago and I miss it so much. All the amazing food!!!!!
I love Palermo where my father was born....

Thank youu 😍
Just when I decided I needed to cut down on carbohydrates, I discover VincenZo's Plate...
Oooops! 🤭 anyway welcome aboard ❤
If I can’t find Mutti tomato paste, can I use regular tomato paste as a substitute? Maybe the Mutti brand will be more flavorful. 🤷🏿♀️
Of course you can use the tomato paste you want
I watched this after eating my store bought Arancini. It was good but I can see that I better try making my own after watching you. My knees got weak when I saw the mozzarella stretch when you were eating it. Now I'm hungry again.
Vincenzo sei un grande!!! Mi fai troppo ridere e parli benissimo!!!!

My father is from Linguaglossa, Sicily Italy and my mother is from Riposto, Sicily, Italy. I have been to Italy a lot even though I was born in Syracuse, NY in America. I love Orancini because they are Sicilian
We have a holiday house in Castiglione di Sicilia .One year I helped the neighbour with the olive picking and we took the olives to the mill in Linguaglossa. We are often there on out way for some spectacular walks on the north slopes of Mt Etna sometimes getting up at 4am so that by the time we are up on the mount we can watch the sun rising over the Calabrian mountains ...weather permitting. We should be there now but because of the pandemic our flights were cancelled.
Delicious. I had Arancini balls at a few other restaurants after I tried yours and yours were the best :)
Looks very nice I gonna make them too
