    Anyone who has been following the cocktail scene over the last several years knows that tiki cocktails and tiki bars have been coming back with vengeance. And much of that momentum has been fueled by the genius of this week's guest.
    Martin Cate, and his tiki empire, which includes everything from bars in several states to a James Beard award-winning book, Smuggler's Cove: Exotic Cocktails, Rum, and the Cult of Tiki, has taken the cocktail world by storm. Due to his influence on how we drink today, we just knew that we had to get him on the show for you guys.
    This week we talk about building community, collecting tiki memorabilia, and building a badass home bar.

    My hubby got me the Smuggler's Cove book for Christmas as I've been trying to hone my tiki drink skills during the pandemic. This book has me enthralled. It's not just the drinks but the whole history and origins. I'm now obsessed. I went from Tiki fan to Tiki fanatic, LOL!

    Martin's book has become the de-facto bible in our home tiki bar.

    Ahhh. I did not realize that Hale Pele in Portland is one of his bars. Now I know why they have the milkshake blenders. Wonderful bar, by the way. I used to go there on occasion when I lived in PDX.

      The into alone is worth the price of admission. But once you add the recipes and the rest of the book, its a must have.

    Great interview! Love the business inspiration on how Martin parlayed his passion in Tiki into a thriving enterprise against the odds. I'm currently enjoying his book with the hopes of mixing up some quality craft Tiki cocktails this summer.

    Wow! This guy is something of a hero to me. Years ago as a kid (back in 1967) I spent the summer with my aunt and uncle in Hawaii. They were long time residents who owned a business and frequently entertained. At 14 years of age, I made many new discoveries there, among them Tiki culture. My uncle made me my first Mai Tai, which was a memorable experience. Fast forward many years later to around 2015 as I became interested in mixology. I discovered Martin's beautiful book, which immediately transported me back to those times, and rekindled an interest in Tiki culture, cocktails, and especially rum. Smuggler's Cove is a veritable treasure trove of Tiki lore and is also laden with a wealth of practical information. The crash course on rum is especially helpful, and Martin writes in a friendly conversational style. This book is always within easy reach, and some day I hope to visit Smuggler's Cove in person.

    Production Note: Great intro, sounds more natural when you introduce people personally instead of that awkward "and i'm joined by..."

      I think both formats work. Episodes where you have one or two people from a specific bar or product are great interviews where you learn someones or some products story like the Chartreuse and Sipsmith episodes. While multi guest episodes feel more topic driven like a roundtable discussion like your first episode. I'd say mix it up. I enjoyed hearing Martins legendary story but also like to hear other bartenders opinions on technique, menus and industry stuff.

    if you just said dark rum to me I'd probably get the one that says dark rum as opposed to jamaican amber rum too... figured you compare mayer's to something else that's more dark like goslings.

      @@BartenderAtLarge Ooohh I have that one. Love it! The expedition is one of my favorite drinks from there.
      May I ask for some advice? There is a drink at the White Chapel called Nude Descending The Staircase it has both Almond Milk and Lemon Juice in it. What's interesting is that when I combine the two together along with other ingredients in the drink, the almond milk coagulates. But when I was at the bar, it didn't coagulate. Any Ideas how that's possible?

      Sire Negri I live in FL (Southwest FL between Ft. Myers and Naples) too, and I feel a Tiki bar is both a great thing and a bad thing. Tiki is, above all else, escapism from the hustle and bustle of the mundane. Here in Florida everyone goes to the beach on their day off or fishing with their family or with someone they know that owns a boat or to the pool or have cookouts with their family on the weekend. It's all out doors. The Tiki we have here (aside from the Mai Kai) is just on the beach or a fish house that offers "Tiki" drinks. The point is that if a proper Tiki bar opens up in your area (my area) people are going to go from outdoor tropical to outdoor tropical. I believe the point of Tiki is to escape from where you're at to go somewhere where you want to be. I live on the Gulf coast of FL and thw beach is 5 minutes from my house. If I want tropical, I simply go to the beach. All that saud, though, "Tiki" here in Florida is a load of crap, aside from the Mai Kai. Far too many reataurants take advantage of the idea of Tiki and convert to the cash cow that is opening a specialty fish restaurant and having "Tiki" drinks. I also believe with all the crappy places (again, except for Mai Kai) FL should have legitimate Tiki bars that serve true Tiki drinks. We are a summer-year-round kind of state, so we should provide proper summer drinks, especially Tiki drinks. My two cents and what I believe about living in FL.

      @@JoseRomero-om4gz You have a good point about the escapism--I live in Miami and I enjoy the beach all year. That aspect of tiki is incongruous with FL. But bars that make tiki cocktails and appreciate ALL rums of the Caribbean are rare. Tiki is not only the aesthetic and atmosphere, but, at its core, a branch of mixology that champions complexity, rum, spices, and tropical fruit.

    Not to bag, but Scotch is more diverse, or as dverse, as rum. You don't make mixed drinks with scotch (usully) because tha dram is all you need. Just getting into Tiki, though that was my life in college. Does he understand there are just as many individual islands making Scotch as there are rum?

      You have no idea even how variable rum gets. Sure, Scotch is diverse as things get, but when you get down to it, Scotch can genuinely be categorised into just 6 regions and 4 types, all governed by one country and all sharing a common heritage. Rum is simply far too broad a category to even compare its variety to that of Scotch. It's governed by so many more countries with so many disjointed heritages and so many varieties in how it is produced as a result. It just cannot be understated how absolutely humongous the diversity within the totality of rum is, it just cannot be compared in any way to the diversity of a single country's whisky, and I question if even all varieties of whisky worldwide actually combine to produce comparable diversity.
      As for not mixing Scotch, let's not pretend any spirit is too good to be mixed. The whole point of mixing a spirit into a drink is to improve the drink, not to diminish the spirit. The beauty of rum in this is that hardly anyone is too arrogant to deny this, many rums are proudly developed to give a whole lot more to a drink than just alcohol, whether we're talking a funky Jamaican, a grassy and vegetal agricole or a strong overproof bringing minimal dilution along, all can be readily enjoyed by themselves or as a constituent of something greater.
