no joke, I have like 20 lbs of that pumpkin sitting on my counter and I'm sick of soup and I wasn't sure what else to do with it but I know now. I just need some agar agar. This looks seriously so good. Great Job!
Maybe google for other dishes, I love simmered and marinated(in shoyu,tsuyu,soysauce,miso...what ever you prefere) pumpkin. Or baked in the oven like potatoe wedges. Or hashbrowns with pumpkins...oooh so so many delicious way to eat them ^^
Heather Banyay Kabocha salad is really delicious! It is a Japanese salad which is similar to potato salad, except the main ingredient is kabocha. There are recipes here on RUclips or elsewhere online. It's easy, and delicious! I agree with Plejade, too. The simmered pumpkin is really good... try searching for "kabocha no nimono."

Kabocha tastes so much better then the pumpkins we have in America. Luckily we can find these in our local Asian markets. The only issue is they are so hard to cut. Also I love that new bowl cover you guys have. I wish I could find one here.
Ann Green You can soften the kabocha skin by popping it into the microwave for 3-5 minutes depending on its size. I don't like the hard skin either...always afraid I'll slice off more than the pumpkin!

Looks so yummy and perfect for the weather right now. I like the idea of using whipped coconut cream, that's some great attention to detail Satoshi. Kabocha is very common where I'm from, and I usually eat it sauteed with rice, but I'll have to give this fun recipe a go!

Have the same situation here, it's hard to find Kabocha, while the "Hokkaido-Type" is everywhere(and my favourite). But I've tastes Kabocha and I would say it's in the same direction but more intense than Hokkaido-pumpkin, more chestnutty, so it will be little lighter in taste with the Hokkaido. But I will try the recipe too, bet it will be amazing ^^/
mamvegana I think you might also try substituting butternut squash if kabocha is not available where you live. It would be a slightly different flavor, but I think it would also work. Depending on where you live, there are also different types of cooking pumpkins. Sugar Pie pumpkin is one that is available in much of the United States, and it might work also. It's pretty grim LOL but, yes, butternut squash has finally arrived and is readily available for the 2nd year now! The description of the flavour profile of the kabocha is surely making for one self-pitying mamavegana, though :^D sooo, will be able to make this recipe, it seems, with a slight loss of flavour sensation, but, - nevertheless, will be able to make it! YAY!!!
