Honestly now that you've said this I now in my head consider shinra getting the immortality potion canon because I just can't see a world where shinra wouldn't take it or not find a way to just make it himself. I ship these two really hard. It's a nice thing to think about how they can live on together with each other forever.

In my own interpretation (I haven't read the light novels), I think she chose not to have her head back because she wanted to stay as Celty instead of Dullahan. This is most probably because she loves Shinra so much that she'd be willing to abandon both her past and could have been future self as Dullahan. She chose her future with Shinra over her past identity. In short, she loves Shinra a lot :3

Cause I can't help it but seeing it as a selfish kind of love when he pull that off. Couldn't he just keep persuades Celty into let go of her past, stay with him and still get keep her head? I mean, what if they start a family? Surely their kids would want to know what their mother's face looks like.
@@afifzahiruddinrohaizan52 the way I’ve always saw it is that Shinra was initially drawn to her for the fact she was a dullahan without a head but overtime came to truly love her but taking into account he spent the last 20 odd years watching her obsess over her head, he came to view it unnecessary since to him she was perfect without her head. So of course seeing her possessiveness to the head add fearing the chances of what will come if she ever found it, he kept its whereabouts a secret and focused on convincing her to let go of it, rather dickish move but an understandable one. And right at the end, his fears were proven true when she got the head back and left, throwing away her future to return to her past as the Dullahan and while Shinra’s actions were indeed selfish and kinda cruel, they did do the job of convincing Celty to let go of her past and focus on the future...with Shinra. While I wouldn’t call it Stockholm syndrome, I will say Shinra’s actions while born from genuine feelings for Celty were far too muddled with his own desires on not having her leave him. He likes her without a head both because he’s just into that shit but also because that head symbolises and has proven itself to be the thing that’d take her from him. Shinra does do his best to be of support to Celty which has been shown time and again over the course of the series.
At least Shinra and Celty got to have a happy ending, even though they’re still on the run from the law and there’s also the possibility that the two can’t have children of their own due to Celty being an Irish Spirit and I think that humans and Dullahans aren’t compatible.
It's safe and secured by "Nebula", the corporation where Shingen works. Her head is in their office in Chicago, it was clearly stated in the last episode.
If a girl as wonderful as celty told me she would be with me forever, we all would react the same way as shinra.
