And here is the most important part to you. Mace and Kit were saved from sudden speed blitz death and became ready for battle, thanks to the time they had while Sidious were killing Saesee Tiin and Agen Kolar. That Office duel was extremely situational and Mace was barel keeping up (it was situational because he used all his emotions and feelings about betrayal, rage and love for Republic made him use his Vaapad's extreme limit) with weakest version of Darth Sidious thanks to Vaapad. Mace and Kit were saved from sudden speed blitz death and became ready for battle, thanks to the time they had while Sidious were killing Saesee Tiin and Agen Kolar. That Office duel was extremely situational and Mace was barel keeping up (it was situational because he used all his emotions and feelings about betrayal, rage and love for Republic made him use his Vaapad's extreme limit) with weakest version of Darth Sidious thanks to Vaapad. Vaapad moved his body like a puppet, allowing Mace to respond to Sidious' speed that he could not react to normally, and since Mace was able to surrender his body to Vaapad, he was able to focus his mind on his shatterpoint ability and began to search for a breaking point to defeat Sidious then he found one and realizing that the window is a breaking point, he shattered it and let the rain in, thus soaking the ground and Sidious was forced to posture up and slow down to maintain his position and thanks to this, Mace could able to unarmed him in duel. But Sidious wasn't even using his full Darkside powers. When he started to using his lightnings, Mace simply said "This is beyond Vaapad" and "Anakin, he is too powerful to me, Anakin ! Please, Aaaaahhh" and begged Anakin for help because Sidious was bending his lightsaber and it was about to touch Mace's face but when Sidious was about to burn Mace, he started to play his role and act like weak to motivate and manipulate Anakin. And Sidious which fought against Yoda was way more stronger than the one fought against Mace. After order 66, Darkside and Sith were growing rapidly because light side was becoming extinct in the galaxy and that shifted Force's balance which made Dark side users more stronger and stronger and Yoda only realized that during the mid fight. In conclusion, Mace is nowhere strong as u guys think. He is somewhere around Dooku's level. Even Mustafar duel Obi-Wan scales above Office Mace lol.

Both Post order 66 Sidious and Knightfall Vader would mope the floor with Mace and they are nearly equal (Knightfall Vader was arguably stronger than Sidious) but Knightfall Vader was not getting stronger just because of the galaxy's dark side nexus after order 66, but he was also capable of reaching his higher potentials with surpassing his limits. Anakin was literally getting stronger and stronger with each strike against Dooku. That’s why Post IH Anakin is permanently stronger than pre IH Anakin. So even if Mace somehow held his own against Knightfall Vader, his Vaapad will not be able to keep up with Vader's growth rate
