Yesterday I canned these up and will try to wait a few months before tasting them! From the ingredients in them I know they will be a hit! Mine look really red in the jar. Maybe they are a different variety than yours or maybe my screen distorted the color on yours. Yes, you need a steam canner! After watching Carol canning with ease using hers, I bought one. It’s a game changer!

No and it will over process the onions
You can choose steam canning instead of water bath only if the processing time is 45 minutes or less.
That is correct which is true of most water bath canning recipes

About 6 months again I had these onions on a sandwich in a deli in Pittsburgh and fell in love! Now I can make them myself! THANK YOU!!!
