    This guy lost me the second he said that Chinese food has stayed authentic in the US… most of the “Chinese” food we eat is American creations. Same with Mexican and so many others. I could tell Nicole wanted to call him out but just moved on. 😂

      He lost me when he claimed to be "first generation Italian" because his father came here from Italy. Not his Mother. Just his Father. Whatever generation he claims to be, he's half Italian at best. And, if he is first-generation, what was his father?

      ​@@garathomasThere are distinct differences between traditional cuisines from parts of China, and then Chinese immigrants in America changing the recipes and coming up with entirely new dishes to suit American palettes. Or did you not know a Chinese person can be an American?

      Yup. If anything, Chinese cuisine adapts the most around the world. They do it because they adapt to their clientele. Chinese food in Italy has drastically different dishes than Chinese food in the US which is also different than what Chinese food in China is like. Local ingredients also play a big role in the changes.

      He's specifically talking about food made by chinese-american immigrants and comparing to how much more italian-american immigrants food has so many variations.

      @@Altmetalpunk It's still not close. The problem is that if they made the food truly authentic to their home recipes, it wouldn't suit American taste. This means they have to alter the flavor (usually making it sweeter) so they don't go out of business.

    So many of the "authenticity" debates are based in the concept that all changes in American immigrant cuisines are done by or solely to suit the Anglo community. That is an influence, of course, but it so overlooks how much change was driven by adaptation within the community to different food availability. So much of the authenticity gatekeeping on food completely craps on that lived experience. Online food criticism in general often has weird classist overtones, so I hope we can leave that behind going forward.

      That's why I like Josh's take about how new a lot of these foods are. He brought it up in the Ramen vs Pho episode too. Americans act like so many foods come from like hundreds or even thousands of years of tradition when a lot of these foods are only like 50 years old.

    His take on shaky cheese is wrong. Shaky cheese is amazing - it's just not parm. It shouldn't be looked at next to parm.

    I was born in Mexico. I lived with my mother and grandparents and we cooked very authentic Mexican food.. while living in America - yes there’s many variations on mex food and since living in Texas - TEX MEX is big here. There’s NOTHING WRONG with that. You really think I’m looking for authenticity at these chains or restaurants?? If I want authenticity, I ask my mom to cook for me😭

    Food is so amazing. I've never understood why you would put a limiter on yourself and your food just because of your culture. Tastes are a pallette like a painter has a pallette and it seems counter-intuitive to limit anything with this much expression just because thats not how Gigi used to do it.

      Creativity isn't the problem. It's creating something and then claiming it to be authentic when it's clearly not. I love fusions and different takes on dishes as well, but have you seen Food Network stars try to appropriate foods? It's borderline criminal how wrong they are.

    Absolutely no "ethnic" foods have remained consistent in the U.S. I just think Italian food comes up the most because Italians are truly passionate about food. However, Italian immigrants in the late 1800's and early 1900's had to adapt their normal diet to what products would be available in the U.S. The reality is this is how food travels across all ethnicities.

    I appreciate measured takes from people who have them, about food.
    I will never appreciate anyone who gatekeeps food types or preparation methods.
    I absolutely enjoy and adore historical tradition, when it comes to food, and if I choose to make a traditional dish from any culture, I will 100% do everything within my power to make sure it's authentic.
    But I also live in reality, and I am very rarely trying to make anything traditional or authentic.
    I make things that are fun or easy to make, that I know myself and others enjoy.
    I pay tribute to my own ancestors by making bastardized versions of every type of ethnic food, and I will never apologize for it.
    Long story short...if you don't like it, don't cook or eat it.
    Everything else is fair game.

    I think it's hard to get very good food takes from someone who is still so young that he cares to think and talk more about his own social media "journey" than understanding food culture. Even his parmesan take wasn't rooted in actual experience since he has never tried shaky parm but is willing to disparage it because all other italians already do. Or thinking that american chinese cuisine is authentic to china. 😂

      Chinese food in what part of the continent? I imagine "chinese food" in Brazil is much different than in Canada.

    Definitely missed the ball with other cuisines not being Americanized, but I think its the one that got folded in to the American diet the most. Spaghetti, lasagna, and pizza is a staple all over the country and a lot of times is made at home. With the exception of taco night, most other americanized cuisines usually involve going to the restaurants or getting pre-made stuff thats frozen. Becky from Iowa probably makes a spaghetti and a lasagna for her family, but i highly doubt she makes an orange chicken.

    For the gluten-free:
    #1: get a pasta stretcher and make your own with Bob's Red Mills gluten-free all-purpose flour. I promise it doesn't take that long and it's very well worth it.
    #2: nasoya Zero Spaghetti (though I've only used it as Asian style noodles in ramen and for cold sesame noodles- but the texture is pretty great)
    #3: Thai kitchen rice noodles- The ones that look like linguine. They're nice and chewy if you don't overcook them and they feel like real noodles.
    #4: Also, maybe a hot take - I found that pasta made from imported Italian semolina flour by a local Italian restaurant or deli, (or pasta that's made in Italy for Italians and then imported, not the kind that's made in Italy for America and imported- It will have a European nutrition fact label and then an American nutrition fact label sticker stuck on the package) even though it has gluten, there's something about it that doesn't bother me like other pastas and gluten. It's worth a try if you're not super sensitive, or anaphylactic.

      There is something with gluten free people being able to eat Italian gluten items. I think it has to do with how they mill their flour. Except for people with celiac since any gluten will lead to the immune system damaging their intestines.

    Chinese food? Authentic? Honey Indian food remained somewhat true to form. Chinese food *adapted* to Kuai Lo tastes so we could market it better. The only way you'd find a place with decent Chinese food west of the Himalayas is if you can find a place that dares to offer you steamed whole fish or *offals*. The Chinese food isn't decent unless there are gizzards, intestines and hearts on the menu.

    2nd generation Italian (Yeah, I'm Old) and great grandparents came from the Asti area. In the 50s & 60s on Sundays the entire family would all go to great grandma's house and make pasta, ravioli, tomato sauce, soup, etc. My 1st job was helping make the ravioli. We never made meat sauce as she didn't put meat in her tomato sauce. Meatballs or other meat was always served on the side. On the side it went better with the Chianti that every person at the table had a glass of. Even when young we had a glass of watered Chianti with the main meal.

    On the Gluten-free pasta front, I recommend the Tinkyada brown rice pasta. My partner and her children are very sensitive to gluten, and we've found this is as close to your average store-bought dry pasta as GF can get.

      Actually, the changes came about because immigrants couldn't get the ingredients they were accustomed to using. They substituted what they had. So people called it whichever cuisine it had roots in because it's what they were used to.
      America is a continent, you know.

    I think because so many of the famous Italian dishes are actually based on or use other cultures p/regions ingredients (tomatoes, noodles, etc.) there’s a tie to saying that what makes it Italian is the process/presentation.

    I'm always ready to not like this guy but this episode was as good as it could've been, per usual. I actually do like him and I think looking back on what it was, it's that I didn't care for his character in the videos but I like him as a regular person.     I get that gluten-free replacement products are always going to be difficult and that you're not going to get a 1:1 replacement, but sometimes you've got to scratch the itch.
    Also, Josh is ignoring the fact that, even if you eat like a "feudal lord" you still have to get alternate versions of everything. Soy sauce is started with wheat. Shaoxing Wine? Wheat. Gochujang? Might have barley malt in it. You can, of course, get GF labeled versions of these things, but it makes off-the-rack shopping at my local ethnic stores harder. (Tip: Dry Sherry subs for Shaoxing at a 1:1 ratio.)
    The reality is that eating before globalization isn't the thing to do. The best path that I've found is to go the other way with it. Fusion. Find ways to mix stuff together.
    Then the audacity of the "well, I wouldn't marry someone who..."
    Sigh. Etc.

    The only thing worth eating at Olive Garden is the soup. The soups are made fresh, several times a day, from fresh, real ingredients.🤗

    Isn’t it very local italian to have primi and secondi piatti. So first course can be pasta, second is meat or whatever. Now Abroad you have one meal and throw it all together

    La venza is amazing gluten free pasta it existed before gluten free was a thing so it was actually good egough to survive in a market with wheat. its 100% corn and made in italy. only gluten free pasta i dont hate

    I think what he meant with that Chinese food stayed authentic is that you have a good separation of the two. Where these "authentic" Italian restaurants even mess up or claim their dishes are authentic and they are not.

    they give you like 8 packets of ketchup per a small pizza in thailand. from pizza hut too. in fact they probably started it here since the other joint is a 1:1 copy of pizza hut

    I'm only italian born and I feel the same way about fake parmasean. It's just cellulose powder. So I guess it's like adding breadcrumbs, which is yummy. Just don't call it parmasean; parmasean has cheese pulls. I see why both are probably used in American-Italian foods.

    There is a correlation of a nations IQ and how upset their people get when disturbing their traditions and food. If we take a country with a great society and civilization, like Sweden. They will not offend easily when changing their recipes or poking fun at their tradition, because their race invented so much for this world. Now take Italians or a country in Africa, they hardly invented anything, or have little to nothing to offer. Therefore, the people are easily upset.
    This is a scientific fact one should not ignore and ignore it is a sign of extreme ignorance to the scientific method.

    I’ve only watched a couple minutes and I fully agree. Italian food has been completely changed but if you’re going to do this episode, you need to do an episode on Mexican food and you messed up by not doing it on Cinco de Mayo which isn’t even a Mexican holiday it is, the observance of one battle in one place the battle of Puebla but I digress if you’re gonna come at Italian food you need to come at Mexican food, Tex Mex versus Cali mix versus Mexican traditional

    I don't agree with the very idea of this episode - Italy is a very internally diverse country, and most so called "rules" were only codified in the past few decades. There's no need to be so a**l about these rules - just use the best ingredients you can afford, and cook it as you like.
