Definitely going to try your jerk tofu recipe. There are tons of Indian, Chinese, Thai & Mexican restaurants in my area but not one Caribbean. I've been missing fried plantains, peas and rice, a lil side of cabbage. Jerk tofu will make it a well rounded (and very filling) meal. My Tabitha Brown seasoning expires at the end of the month so I've been putting it on literally everything... lol Happy Mother's Day to your mommy! TFS!
