Strawberry Shortcake Cake / Strawberry cake

  • This recipe may not seem easy, but trust me, it is. You can also make it in a tub or as a trifle for an easy assembly.
    Strawberry shortcake
    Chiffon cake
    4 eggwhites
    pinch of cream of tartar
    1/4 cup white sugar
    4 eggyolks
    1/4 cup white sugar
    1/4 cup corn oil or vegetable, or canola
    1/2 cup pineapple juice or milk
    1 cup cake flour
    1 tsp baking powder
    pinch of salt
    1. Preheat the oven to 350°F
    2. Line the bottom of an 10x12-inch swiss roll pan with parchment paper
    3. In a medium-sized bowl whisk the egg yolks, sugar, pineapple juice or milk, and oil and mix well.
    4. Sift the flour, baking powder, salt into the egg yolk mixture and mix until combined
    5. In another bowl with an electric whisk, or in the bowl of a stand mixer fitted with a whisk attachment, whip the egg whites with sugar until stiff peaks
    6. Add ⅓ of the meringue into the egg yolk mixture and mix until smooth
    7. Transfer the lightened egg yolk mixture to the remaining meringue and fold carefully until just combined
    8. Transfer the batter to the cake pan
    9. Bake for 12-15 minutes
    10. Remove from the oven and allow it to cool
    Strawberry Jam filling
    2 lbs strawberries (chopped)
    1 Tbsp lemon juice
    1/4 cup sugar
    1 Tbsp cornstarch
    *(to make: combine all the ingredients together in a pan stirring constantly until thicken)
    Note: Adjust the sugar or sweetness to your liking.
    Cream filling
    2 cups heavy cream.
    8oz cup cream cheese or mascarpone
    1/4 condensed milk or sugar ( adjust sweetness to your liking)
    beat cream cheese and condensed milk together until light and creamy, then add the heavy cream and whip until stiff peak .
    ***Optional:
    Strawberry whipped cream
    Take 1/2 of the cream filling and fold in 1/2 cup of strawberry jam.
    Stack one layer of cake and spread 1/3 of the whipped cream evenly on top.
    Add 1/3 of the strawberries, leaving the liquid behind.
    Repeat with another layer of cake, whipped cream, and strawberries.
    Add the final layer of cake, whipped cream, and strawberries.
    Garnish with whole strawberries, if desired.
    Serve immediately, or refrigerate. Best served within 1-2 hours.
