Chicken Shikumpuri Kabab :
For kabab making ingredients:
Chicken 400 grams
Chickpeas lentils 100 grams
Potato 1
Whole red chili 5-6
Salt as required
All spice powder 1 tsp
Filling ingredients:
Curd 2 tbsp
Mint 4 tbsp
Chopped ginger 1 tbsp
Finely cut cashew nuts 2 tbsp
Chopped onion 1
Eggs 2
Oil for frying
Method:
In chicken add potatoes ,chickpeas ,salt and whole red chili add and tender will than water dry .then add egg and all spices powder mix well .now add all filling ingredients mix and make kabab then fill it and then fry in oil then serve .
Arabic Rice:
Ingredients:
Boiled rice (sella) 500gm
Butter 6tbsp
Oil 4tbsp
Vermicelli (thick) 3/4cup
Raisins 4tbsp
Almonds 15
Pistachios 20
Chicken stock 1-1/2 cup
Green cardamom 4-5
Boiled eggs 2
Bay leaf 2
Lemon juice 2tbsp
Method:
Heat butter in a pan then add almonds, pistachios and raisins. Then add Vermicelli and fry it till its brown. Then in a different pan heat oil and add cardamom and bay leaf to fry it slightly. Then add chicken stock and lemon juice till it cooks after that add boiled rice mix them thoroughly and set the flame high
When it’s steamed add Vermicelli and some almonds, pistachios and raisins. When it is roasted serve it with boiled eggs and the rest of the dry fruits.
Spicy Balochi Karahi:
Ingredients for Spice:
Chicken 600 gm
Onion 1
Ginger garlic paste 1 tbsp
Tomatoes 2
Yogurt ½ cup
White cumin powder 1 tsp
Salt, chili, turmeric as required
Black salt ¾ tsp
Clarified butter ¾ cup
Chaat masala 1 tbsp
Green chilies 5-6
Method:
Heat clarified butter fry onion. Also add whole spice cook well. Add ginger garlic paste, salt, chilies, turmeric, white pepper and tomatoes cook. Add yogurt mix well. Add water cook till chicken is done. Add black salt, green coriander, mint and green chilies mix well. When chicken tender then add black salt, green coriander, mint ,green chilies and leave on dum .now add 5 to 6 green chilies fried and dish out and remove then garnish with chaat masala .
