Also, at the very end of the cleaning process, they pour boiling water over the meat before seasoning it 3.) Pikliz is spicy pickled cabbage, a tangy, savory coleslaw type of food 4.) Every Haitian seasons their meat differently, but some common spices and flavorings that most Haitians use are epis (a cooking paste that consists of garlic, scallions, and all colors of bell peppers that are blended together-this is also used to make soups, rices, porridges... basically everything lol) as well as Adobo and Sazon (these two seasonings are also very popular in Latino dishes)

The black rice you are eating is called Djion-djion aka black mushroom and fresh coconut milk is used as well in it (it's optional to some). Pikliz (raw shredded cabbage, carrots, scotch bonnets, vinegar pickled like...) that is usually put on your meats or all over the food which gives another layer in enjoying the food. The little container is gravy (usually put over the rice or meats or all over, it's a preference). I am so glad to see you enjoying our cuisine and love to cook for people who enjoy eating our foods, it gives me so much pleasure. The pork is Griot aka fried pork and the marinade we use is fresh sour orange, lemon or lime, vinegar salt, fresh thyme, clove, fresh garlic, epis (a culmination of greens such as shallots, scallions, parsley, green and red peppers, red and white onions, plus) which is key or base for all of our cooking as well as enduis (which is cured pork belly fat that is seasoned in a heavenly brime) and used in such as the rice you're eating to enhance the djion-djion flavor, but is usually left out for those who are vegetarians or they would offer vegetarian as well. No matter the meat we use, cleaning is a very important factor in our cuisine/for us (as with everything else we do). We got to have fresh ingredients as possible, apart from salt, vinegar, lemons, limes, sour oranges, and those juices are also used to make our marinade to bring out the most beautiful golden color to our meats also tenderizes (but each meat as a different way to be cleansed and that a different topic). We love for our meats to marinate overnight, the longer the better. Understand that any meat goes through so much hand exchange before it comes to you and when it does you want to clean off ALL those germs out as much as possible that's why cleansing is an important part of our custom and culture (that's with everything). And we love lots of different colors (vegetables) in our foods, for our eyes, our senses and presentations, and especially for the taste buds etc. Yes, it is lima bean. That spicy slaw is called “pikliz” and you put it on top of the fried pork which is called “griot” and the gravy in the little cup can be used on your meats and rice..glad you enjoyed my country’s food 🙂 also there are different types of rice you can try

The black rice you are eating is called Djion-djion aka black mushroom and fresh coconut milk is used as well in it (it's optional to some). Pikliz (raw shredded cabbage, carrots, scotch bonnets, vinegar pickled like...) that is usually put on your meats or all over the food which gives another layer in enjoying the food. The little container is gravy (usually put over the rice or meats or all over, it's a preference). I am so glad to see you enjoying our cuisine and love to cook for people who enjoy eating our foods, it gives me so much pleasure. The pork is Griot aka fried pork and the marinade we use is fresh sour orange, lemon or lime, vinegar salt, fresh thyme, clove, fresh garlic, epis (a culmination of greens such as shallots, scallions, parsley, green and red peppers, red and white onions, plus) which is key or base for all of our cooking as well as enduis (which is cured pork belly fat that is seasoned in a heavenly brime) and used in such as the rice you're eating to enhance the djion-djion flavor, but is usually left out for those who are vegetarians or they would offer vegetarian as well. No matter the meat we use, cleaning is a very important factor in our cuisine/for us (as with everything else we do). We got to have fresh ingredients as possible, apart from salt, vinegar, lemons, limes, sour oranges, and those juices are also used to make our marinade to bring out the most beautiful golden color to our meats also tenderizes (but each meat as a different way to be cleansed and that a different topic). We love for our meats to marinate overnight, the longer the better. Understand that any meat goes through so much hand exchange before it comes to you and when it does you want to clean off ALL those germs out as much as possible that's why cleansing is an important part of our custom and culture (that's with everything). And we love lots of different colors (vegetables) in our foods, for our eyes, our senses and presentations, and especially for the taste buds etc. Yes, it is lima bean. don't eat this everyday (the above food was usually reserved for parties, a night out, movies or special occasions that are popular), but consider and try to also eat healthy foods like legume, salad (green or cooked), bulgur, wheat, couscous and so much more. Our Haitian cuisine as so much more to offer, don't only be stuck on the popular stuff, there's so much not yet discovered! Eating this everyday can cause health issues in the long run dearest.
