I'm Argeentinian, and if I may suggest you a little change to do it the way Güerrin famous pizzería does it for you to try: do it as if it were an inverted cake, e.g. cover the pan with oil, put the onions to cover the bottom, and go on doing the rest as you did it. When almost done, place a flat surface on top to turn it upside down and place it back on the pan, with the onions on top perfectly caramelized. Add parmesan and I like to add some fresh onions as well, some more oil and back to the oven some minutes to end the (now) bottom crust and melt the parmesan you just added. I also like to suff it with ham, and sliced boiled eggs (although not anymore a pizzeria recipe) doesn't hurt at all.
That looks really good. If you dare a nice twist is to flip the pizza on the pan and finish cooking the onions. Thats how "La Mezzetta" does it, one of the best pizzerias in Buenos Aires.
OMG, La Mezzetta was amazing! I just got back from Buenos Aires. I learned about La Mezzetta on the Buenos Aires episode of Somebody Feed Phil on Netflix. If you haven't watched that, please do. I even took some of the famous napkins (from the episode).
