I lived as a missionary kid in Thakek until 1975, and when mom brought these home from the market it was a really big treat. We loved them then, and I still love them now. Thanks for this recipe! I had never been able to get the sauce quite right, and I will try it this way!

@@SaengsKitchen In the mid ‘70s we moved from Laos to northern Montana, where you can imagine things were quite different and there was a lot of culture shock! Food we loved was simply unavailable. Gradually more exotic things made it to our grocery store though, and one day Mom came home from shopping with a gleam in her eye: she had found fresh cilantro for the first time at the store. She pulled it out of the bag and as we smelled it we instantly remembered these spring rolls. Cilantro was always one of the herbs in the lettuce wraps for us, and we had not tasted it in years! I can only imagine how hard it was for refugees to move here. It was hard enough for us who had always had one foot in each culture… for the elders it must have been devastating.

my issue with this whenever my family made it when I was younger was that it tended to get soggy real quick. I still miss it though, been very long since I last had it.
