How to make Briam - Greek Vegetable Dish

  • A traditonal Greek dish - Briam is a healthy, baked vegetable dish packed with flavour!
    Ingredients
    1 Aubergine
    3 medium sized potatoes
    3 medium sized courgettes
    3 onions (you can use red or white onions)
    4 cloves of garlic
    Salt & Pepper
    1 tin chopped tomatoes
    Small bunch of parsley
    Half a cup (125ml) olive oil
    Its the perfect dish to make for any time of the year but particularly in the summer as aubergines and courgettes are at their best.
    This dish is vegan, vegetarian, gluten - free, low carb and absolutely delicious!
    In Greece we eat it as a main meal with (yes, you guessed it) a good chunk of feta cheese and crusty bread.
    You will love it!

    In my Work place in Pangrati, I ate Briam for the first time and I was asking the guy who prepared the food to tell me the name, and guess what, when I will be off, I will make it at home 😂. Very nice recipe

    Briam is a beautiful simple dish, I add halloumi in the last 15 minutes.
    First had this dish on the island of Syros. Also had it this year on Thassos island.

    First time I had Briam was in Stoupa, on the beech in a traditional taverna. we are vegitarians, beautiful and full of flavour. So simple

      @@SofiasGrekaKitchen we have Briam twice a month, I've cooked a eggplant lasagna today Greek style. Do you have a good vegan stefardo. We had one in Crete 3yrs ago, I should have taken the recipe. Your video's are excellent by the way.

    Hello I have some questions on the ingredients I’m writing to you from San Francisco
    Aubergine is that eggplant?
    Potatoes are you using rustic potatoes?
    courgettes is this zucchini?
    tin chopped tomatoes how many ounces is the can?
    Salt in your recipe you’re using half a teaspoon. I don’t know if I heard you right because it’s so many vegetables I would think it’s a teaspoon?
    Oven temperature 350°

      Hello, thank you for your message and apologies for my late reply.
      Aubergine is eggplant you are right. The same for courgettes and zucchini. Rustic potatoes will work well. Tinned tomatoes are 14 oz I believe.
      In respect of the salt, I am cautious as all of are so different, so I would suggest starting with half a teaspoon and adjusting to your taste.

      @@alisonender yes, I think so...Greek oregano has a deeper flavour and earthier taste. Greeks pick oregano (we include the flowers and stems) towards the end of summer, we let it dry by hanging it upside down and therefore has a stronger aroma. Its wonderful!
