    I really love that the people running this channel seem to find hardworking souls in completely remote areas, all of whom deserve far more recognition than the celebrities we hear about non-stop. I truly commend you guys; you make people like this kimchi master feel like they really matter in the world, which they truly do.

    Dear Koreans please export your Kimchi manufacturing to Europe. It's hard to get Kimchi in regular supermarkets.
    People resort to fermenting their own Kimchi at home.

      It's pretty easy to make kimchi that's better than anything you can get at a supermarket! It takes a few hours, but you can make huge batches.

      Yes, I resorted to fermenting my own Kimchi with sea weed, garlic and spices. It like cooking one week in advance.

      The restaurants are actually cheaper in small towns, because the rent is cheaper for them. Like 20 to 30% cheaper, or even 50% if we talk about luxury foods.

      There are so many mountains like that in korean peninsula..
      it caused higher rate of myopia, and higher food price(lack of plains to grow crops in a massive scale)
      plains are so much rare that koreans awe at plains in europe and america lol.
      There's also a dream of many of retirees who wish to live near such mountain with a wooden house 🙂

      you must have done something wrong, my mom always makes our family kimchi like every 1/4 of year, about 2 boxes cabbages and i don't smell much.

      Kimchi doesn't smell to people who are used to eating them, but I've heard strongly fermented food can sometimes even smell like dead bodies to foreigners.

      haha omg so true. Despite being Asian (Eating & encounter A LOT with fermented food), my parent is so terrified of it. My dad once commented "Where is that rachet smell coming out of the fridge?" and when my mum found out, she literally wrapped my box of kimchi in 4 layers of nylon. Hilarious

    Kimchi is like the Koreans French Fry. We eat an astounding amount of it. Sadly though In our local asian market the Kimchi they have is always over fermented. And its hard to eat a large jar and not let it go to waste. My mother likes to make Kimchi tofu soup when that happens. Or Kimchi Korean Pancakes. It's just such a deep and delicious part of our culture. And I love that Great Big Story is showing that to people.

      Over fermented... In Korea, many houses ferment some Kimchi about 1 year to 5 years. And that kind of Kimchi is called 'Mugeunji'.

    My grandma makes kimchi all the time. Takes a lot of patience but the flavor is so rewarding. Makes me really proud of my heritage.

    This is why i like documentaries about east asians. They're so humble, soft-spoken, and down to earth. Nothing that they say feel excessive and they love their tradition and culture so much. So glad that GBS cover plenty of asian stories

    Hello from Oregon! I’m not Korean but I had a Korean step grandmother in my 20’s . She was born and raised in Hawaii. before she passed away, she taught me how to make Kimchi. I remember her telling me that if I didn’t want it too hot I could use sweet paprika to make the color right. I loved using it on rice, potatoes and meat but I became allergic to hot peppers which bummed me out so I never tried making it since but I just might try making a batch without the hot red peppers flakes and just use paprika which doesn’t seem to affect me and see how it tastes. I really miss it.

    I wish I could try kimchi!!! I've seen a few episodes on food network/travel channel about it and it sounds good! Where I live, this is no where near a menu!

      I recommend that you start with a lightly fermented kimchi. Also, kimchi has a range of pepper in it. Many people make it hot. Kimchi varies a lot! You might be able to buy it on line. Look at wikipedia for the definition of kimchi.

      Catherine Leimberg I'm South Korean, so I had homemade Kimchi before and it is very delicious, but there are many different varieties of Kimchi, such as Radish Kimchi, Cucumber Kimchi, Chive Kimchi, Napa Cabbage Kimchi like the one in the video and many more!

      You can definitely make kimchi at home! I grew up watching my mother make it, and while it takes a bit of effort and a lot of patience, the results are worth it! You should google maangchi- it's a website chock-full of amazing Korean recipes, including kimchi ^_^

    "lightly tingly" THE MOST important part of GOOD kimchi. it's a great indicator that the fermentation has properly taken place. and its a great sensation in your mouth! god i love this stuff, and all Korean food for that matter (bulgogi bibimbap❤️)! its just so unique and amazingly tasty 😛

    I used to live in South Korea and every day me and my mother used to walk to a restraunt to buy some of Kim stuff and I loved it and that was 4 years ago now I live in canada

    I remember eating kimchi when I was little I really love it! But growing up I kinda stop and forgot about it and recently I found about kimchi (again) started eating it brings back a lot of memories when I was little
    (No I am not korean I just like kimchi)

    It looks like he's making kimchi in an old way. Northern areas (now north Korea) kimchi has a similar style like his, using less sauce which makes kimchi to ferment longer as well as retain the freshness longer. The flavour is cleaner, fizzier, tangy and very refreshing compared to southern styles of kimchi. This kimchi goes well with spicy soup and great garnish for light cold noodle. Southern style kimchi put more sauce and salt that make kimchi dense/strong and fuller flavour. I love all styles of kimchi.

    I love fresh kimchi. My parents love more matured and fermented kimchi which I don't like as well. Once it gets too old you should cook the kimchi for further use.

    I have this habit eating kimchi everyday, I make Kimchi rolls. It's is the same as kimbap but I use Kimchi instead of Kim (sushi nori if someone don't know what it is). I mix rice, some namul, stir fried anchovies and some fresh cucumbers and make a roll like sushi with kimchi. It's so delicious

    I love kimchi. I eat it straight up whenever it's available. Whenever we go for Korean BBQ, my wife always orders me several sides of kimchi because she knows.

    There is a translation error at 1:16. He said 젓갈 which is salted fish/pickled seafood, but it can also refer to different kinds of fish sauce. So it should say fish sauce not salted fished in this instance.

    I'm a second generation Chinese-American who grew up eating home cooked Chinese food but tasted all manners of different cuisines.. and it was kimchi that caused me to place Korean food at the top of my palate!

    In the Southeast U.S. we have a traditional dish called collards, and the secret to getting them to taste like authentic soul food. Is that u must include either fat backs, hog maws, or ox tail slow cooked to perfection.

    I don't know. I have pretty broad tastes, I have lived in several countries and have tried many cousines around the world but I cannot get to like kimchi and especially Korean cousine

      Have you tried korean food in korea? From my experience abroad korean food outside of korea can be mediocre and an unfaithful imitation of the original. I myself disliked chinese food until my first trip to rural china.

      @@hyointheforest Yeah just to clarify I'm not saying it's bad, I have never been to Korea myself but I have lived 2 years in China and traveled some parts of southeast asia. I know I should try the real thing to have a real world comparison, because what I was served in my country just didn't stand a chance.

    If you can get past the smell of Kimchi it actually is a very delicious dish especially if it got the right amount of crispiness, freshness and fermentation. One of my favorite side-dish.

    I remember the first time I tried Kimchi and I enjoyed it very much. I had to do to Las Vegas to try it and I know it may not ha e been GOOD kimchi. I can not get it where I live but , I still glad that I tried it and want that experience again. Now can someone tell me if I can get this delicious food in the mail by chance ?
