This is far from "rubbish"! It looks very good. Food is what you like. Couscous is very versatile. If you add a bean or a legume, or have dairy on the side, you will have a complete protein, like meat.
No it's not rubbish! I eat couscous every week and there's nothing wrong with what you've just made! It's simple, filling and quick. I also enjoy it made with some moroccan spices with cut up peppers, sultanas,onions. Basically you can mix couscous with whatever you want. Lime juice and coriander in some couscous is also delicious. Lemon/garlic with some chopped courgette and tomatoes.... its an endless source of flavoursome food.👍
Karen, that is not rubbish - it looks fresh and enjoyable. My variation - to prepare the couscous: put the couscous in a bowl and add some stock powder and pepper and mix, then add about a tbsp of olive oil and stir through (less oil if it's a small serve etc) the couscous should look a bit like damp sand. Then add the hot water, place the lid on and leave for a few minutes then fluff it through with a fork. The rest is as you did it for a salad (I add a tiny bit of cumin) or use it hot with a curry or saute some veg and then stir through the couscous for a side dish.
I made some last summer for my birthday bbq, went down a storm, I left out salt and pepper and added a vegetable stock cube for flavour... One of my sister in law doesn't eat salt, so the grinders are left out for everyone else to use, I've even been known to take portions out just for Claire and been able to season the rest... One year I did 5kg of strawberries, they were on offer and I had family round, left them just clean washed, sugar separate, for those that didn't do sugar... turns out they all did x lol x the nieces and nephews all took strawberry home with them, never any waste when we all get together xxx
I made a bowl of bulgur wheat this morning and will be making something quite similar. Will also be adding some sweet red pepper and some garbanzo beans. And I did add some chicken bouillon to the water, like some others suggested. Looks delicious.
This really frustrates me. I cannot, no matter how often I try, get the cous cous to be loose and fluffy like that. Mine always becomes stodge. What am I doing wrong?
I was taught in Morocco to steam couscous. It really swells and becomes loose and fluffy. The same quantity of uncooked couscous at least triple in size.
If you add a chicken stock cube to the boiling water it gives more flavour. ❤

Also a neat trick I learned was to put the measuring cup in a cupboard so that the cup is at eye level. Your meal look so good.

Maybe put less water in?
Soak, don't boil, and stir at least twice to break up the clumps?

@@julibeswick-valentine3690 Ive only steamed the large cous cous, not the standard stuff we get here in the UK. The large grains are worth the effort.
