  • When you want an easy and quick side dish, make the sautéed zucchini in a pan, a delicious recipe, very, very simple and very tasty. The sautéed zucchini goes very well with meat recipes and fish recipes, they are excellent as a single dish accompanied with a little bread and are great for filling your sandwiches.

    INGREDIENTS FOR 4 PEOPLE
    4 medium zucchini
    Salt up to taste
    5-6 tablespoons of extra virgin olive oil
    3 large cloves of garlic
    First wash the courgettes and dry them well. Remove the ends and then cut the courgettes into chunks, first dividing them in half lengthwise twice and then into small pieces trying to cut them of similar size to ensure even cooking. Put the courgettes in a large container, season with the oil and mix well. Now mash the poached garlic cloves, add them to the zucchini and mix. Turn on the flame under a non-stick pan and let it heat well for a few minutes. When the pan is hot, transfer the seasoned zucchini inside and stirring frequently, cook over high heat for 5-6 minutes until they are golden brown (almost scorched). If you want to avoid "breaking" them, mix them gently or toss them in a pan. When the zucchini are golden turn off the heat, add salt, close with the lid and let it rest (they will also cook inside) for another 5-6 minutes. Do not add water, courgettes are already rich in it, so avoid it. After 5-6 minutes, serve the courgettes by removing the garlic cloves or place them in a container and set aside.
