    Ingredients:
    500g baby potatoes
    2 tablespoons oil or ghee
    1 teaspoon cumin seeds
    2 bay leaves
    2 cinnamon sticks
    4-5 green cardamom pods
    1 large onion, finely chopped
    2 teaspoons ginger-garlic paste
    2 tomatoes, pureed
    1 teaspoon turmeric powder
    1 tablespoon Kashmiri red chili powder (adjust to taste)
    1 tablespoon coriander powder
    1 teaspoon garam masala
    Salt to taste
    1 cup yogurt, whisked
    Fresh coriander leaves for garnish
    Water as needed
    Instructions:
    Begin by boiling the baby potatoes until they are fork-tender. Once cooked, drain the water and let them cool. Peel the potatoes and prick them with a fork all over. This helps the potatoes absorb the flavors of the gravy.
    Heat oil or ghee in a deep pan or kadhai over medium heat. Add cumin seeds, bay leaves, cinnamon sticks, and green cardamom pods. Sauté until fragrant.
    Add finely chopped onions and sauté until they turn golden brown.
    Stir in ginger-garlic paste and cook for a minute until the raw aroma disappears.
    Add the pureed tomatoes and cook until the oil separates from the masala.
    Lower the heat and add turmeric powder, Kashmiri red chili powder, coriander powder, garam masala, and salt. Mix well and cook the masala for a couple of minutes.
    Gradually add whisked yogurt to the masala, stirring continuously to prevent curdling.
    Once the masala is well combined, add the boiled baby potatoes to the pan. Gently coat the potatoes with the masala.
    Pour in enough water to cover the potatoes. Cover the pan with a lid and let the Dum Aloo simmer on low heat for about 15-20 minutes, allowing the flavors to meld together.
    Check the consistency of the gravy and adjust with more water if needed.
    Once the potatoes are tender and the gravy has thickened, remove the pan from heat.
    Garnish with fresh coriander leaves and serve hot with steamed rice or naan.
