    Honestly I feel like it’s just faster by hand after watching this video, I make dough for three different restaurants and I can get through a 250lb batch in 20 mins, I feel like this is just a lot more steps to do the same thing.

      HI,
      Thank you for the note. This video is slowed down to clearly show how to operate and steps involved in using this machine. Our machine produces 660-880 doughballs an hour when run at full speed, with a variance of .1oz. It is used by many customers to help save on labor cost, increase production and minimize waste product. We appreciate the note and if you have any questions, please don't hesitate to reach out to info@univexcorp.com

      @@UNIVEXCORPORATION I’m just saying overall it doesn’t seem like it would save much time at all. Mabye shave a couple mins out of the 20 it takes anyway

      @@shmittyfloors4870 Thank you! Total operation of the unit once the dough is mixed, is much less than 20 mins in operation.

      @@UNIVEXCORPORATION so how long would it take you to portion out 12oz portions out of a 250lb batch of dough?

    • @UNIVEXCORPORATION
      @UNIVEXCORPORATION  2 года назад

      @@shmittyfloors4870 Each divide and rounding cycle to produce 11 doughballs takes between 20 and 30 seconds. The only math and prep you need to do, is the large initial doughballs. out of 250lbs, you can make (30) 132oz doughballs. Once you make those doughballs, you can divide and round into 11 equal portions of 12oz at 20-30 seconds at a time.

    Have you weighed the dough in the bowl before cutting it please?
    What about when you put more dough in the bowl please?

    • @UNIVEXCORPORATION
      @UNIVEXCORPORATION  4 года назад +1

      Yes! So you weigh the ball out initially to put in the large tub on top. Everything else is volumetrically divided. So if your doing a 10 oz dough ball in the DR14, you would do 10x14 = 140oz dough ball in the large tub above.
