Mannnn AB!!! I made this last night and it was a HIT... I had to use what I had in the fridge but I made it work. I used Penne pasta, red onion, garlic, sour cream, a little evaporated milk, regular 1% milk, chicken broth, parmesan cheese, fresh spinach, basil, shrimp, crab meat and made my own spices like you did. My girl told me that it was one of the best meals I ever made. I said "Thank AB!!"
I saw somebody used cream cheese in their recipe on TikTok so I thought it would be a good ingredient to add. 😒 I was wrong. I hated it and ruined my whole pot of Alfredo. Never again.

Looks yummy. You can use heavy cream or half and half instead of sour cream an evaporated milk. I can't wait to try your recipe....I love using alot of shrimp too.

I don’t know if it’s a good substitute but I thought of plain Yogurt, and cream cheese, grated Hoffman’s sharp cheese. Keep it moving AB. You’ve earned your own folder in my library.
When I make this dish I use the water I cooked the crab, mussels and shrimp in and boil the noodles in that. Gives it a lot more seafood taste, but I like your idea of cooking the shrimp in the garlic oil.

Nice! Alfredo sauce is the first italian sauce I learned how to make. I was taught by a family friend who is a hotelier, restauranteur, and italian. My version is a bit different. I reduce the sauce longer and use heavy cream instead of milk. The sour cream is an interesting twist. I would use reme fraiche instead. That's me though. Keep bringing us the fire.
Good substitute for Sour Cream for me would be Crema (it's mostly in Spanish so just look for that word located in the dairy section) Table Cream is another one nestle makes it (I use this for mac n cheese and banana puddin'). But we keep sour cream on deck so thank you very much. Long Time Subscriber from Chicago !!!

I’ve used evaporated milk with sour cream to make baked Mac n cheese too.
This is a good alternative to know cause a lot of times I don’t have heavy whipping cream at home when I need it.
