I am from New Orleans and I'm making seafood portofino tonight. I have two sea scallops, two lobster tails, a lb of bay scallops, a 1/2 lb of shrimp, fresh salmon fillets, fresh asparagus, garlic, fresh baby spinach, freshly grated parmesan/reggiano, fresh basil and parsley, heavy cream, real unsalted butter, and lobster ravioli. Oh, and baby bella mushrooms. Those are the baby portabella's. Meaty and delicious. A half of a Vidala onion. Most of my college tuition was tpaid by cooking Cajun meals for my friends. They would come to my apartment to study and eat. I'd make red beans and rice, gumbo, jambalaya, etouffee,, etc. Gosh. I can't believe how much I cooked for them. Anyway, I've been cooking for my son, daughter, husband, grandsons, and friends for the past 23 years. Wish me luck on this one. The ingredients cost $100. Well, $10 of it was toilet paper.

You should use real white wine. The stuff is loaded with salt.
Yes! Use wine you would drink! Its much better to enjoy in a new way too
