Oven temperature: 170 degrees Celsius
Tartellete:
120 grams of flour
80 grams of butter
2 grams of salt
1 egg yolk
Pearl onion juice:
300 grams of white wine
200 grams of white wine vinegar
2 grams of salt
4 bay leafs
Celery broth:
250 grams celery
700 grams of apple juice
8 grams of salt
20 grams of lime juice
10 mint leafs
Lime gel:
150 grams of lime juice
20 grams of ginger syrup
80 grams of water
80 grams of sugar
8 grams of agar
Pea cream:
250 grams of green peas
100 grams of double cream
200 grams of vegetable broth
2 grams of salt

I made this! Highly, highly recommend, it was a huge hit and my personal favourite of Jules' recipes that I've tried (I think I ate the leftover pea cream and salad with a spoon after). The lime gel was amazing, you will have leftovers, I used it as the main ingredient to my palate cleanser (along with a frozen lemon, ice, sugar, and a bit of the celery broth). I served it with a quenelle of fresh ricotta from a local cheese shop, and it work wonderfully. I think I may have used the wrong size for the shells just because the dough was thin and I could've used about 15% more, but it was buttery and delicious. Highly recommend, especially if you're throwing a dinner party for those with a less experimental palate, even the kids at the table loved it.

Hi Jules, I am going to make this in two days. Is it possible to already prep the celery broth, pea cream and the lime gel a day before? Or won't it be as good after 24 hours in the fridge?

Hi Stef, really depends on the component. The broth is for around 10 persons, the gel for 30 and the cream for 10 as well

Cool them down in some ice water and then peel the other membrane off
If you wait to reduced by half 300 gr of the liquid with the pea in you are going to get brown color pea.
