Sabaidee! Our last name is Chanthasene. :) I am not fluent in Lao. I mostly know words related to food and cooking. Haha. A lot of times I can understand when Lao is spoken because I'll recognize words, phrases, and notice the tone and body language. :) Otherwise I smile and nod haha.

I’m 40 years old now and I’m aware about the quiet war which was not so quiet they planted many land mines in that time in Laos I’m glad to hear you know about that too….
I’ve had to educate myself as an adult. Sadly the US education system doesn’t teach proper geography and world history. Laos was unknown to me until I met my husband in 2011. I have so much love for Laos and the people. I hope to visit some day.

Yes yes! It all started with him. He introduced me to the food and I fell in love… with the food and him. ❤️ So I cook what I like to eat and as a way to show respect for his heritage. Plus our kids are Lao and it’s important they stay connected to the food.

Hey there you two brother Tony here and first just wanted to say love Cat's cooking channels and somehow happen to stumble upon this one aswell and just wanted to share that as a Tai-Lao person "Before I built up my current Spice tolerance level, the most peppers i had in papaya salad was 40 back in 2003 lol" and it sure did its toll on me I BLED =( LMAO but thats the only way to build spice tolerance =D

The most thai chili peppers I ate in a papaya salad is 20. Super spicy, but the flavorful sauce made it bearable. It's sad the country of Laos still have bombs or land mines that's still on the fields. Cambodia still have undetonated landmines and bombs scattered across the country side as well. What's really horrific is over 2 million Cambodians died in the Khmer Rouge or Killing fields. My Grandparents from both my parents died in the war. I never got a chance to meet them.💔🥺
Wars are so devastating. And the effects last forever. So sorry you were not able to meet your grandparents. I hope efforts to clear the bombs continue and the loss of life can end.

Thai chilis can vary in heat. I usually add 6-8 (my idea of medium) when I make thum mak hoong.This last batch of chilis that I bought was way spicy! I tried putting 6 and my tummy wasn’t haven’t it so the last thum I made I only added 4 and the back of my neck was still sweating.
I’ve experienced the same with different batches being different heat - when I buy from the store. I get most of my Thai pepper from my mother in law and hers are pretty consistent spice so I know what to expect. She grows them. ❤️

When you grow your own chilly toward harvesting time may be three-four weeks do not excessively watering them just to keep it green. They ‘ll be hotter.Because l had tried on jalapeño oh boy they turned mean.

The hottest papaya salad Ive ever tried was 22 peppers. It was 🌋laava!!
