On you tube I went through chicken casseroles , and tried so many failures. They were either too cheesy, too saucy, too bland, too spicy, too Tex-mex, too shockingly unhealthy, etc. UNTIL I tried this one. We never had casseroles when I was growing up, and I never made them when I was a young wife and mother because my children didn’t like their foods to even touch each other on their plates, never mind mixed together when cooked. Now in my 70s I find that a casserole sometimes hits the spot. There is something nice about a good, all in one meal that is easy and very homey. This chicken casserole is the very best I have tried to date. The stuffing adds a delicious crunch and a just right tastiness. It’s good reheated and makes great leftover meals. Terrific, just really really good. I thank you, your husband and his grandmother for the wonderful legacy she left you (and me).

Made this for dinner tonight with the homemade cream soups. Cooked chicken with onions and celery leaves in the broth. Strained the broth and added onions and celery to soup mix. Served with cranberry sauce and Cheddar Bay biscuits. DELICIOUS!!! Thanks for sharing!

My grandma was a Minnie and she lived in Arkansas in a place you on went by invitation or if you were related and had the right last name!!! lol My dad said that Grandma was so frugal that they ate everything but the squawk , and that was just because she couldn't catch it!!! lol
Made this tonight and its delish!Took awhile because i had to make my own gluten free stuffing from homemade bread and i also made cream of celery soup no canned soup for us....I Saute onions and carrots had no peas or would have used them...I used poultry seasoning garlic and onion powder. Thanks!
My church family, has been blessed with three babies born recently. I’m going to make 3 of these casseroles and send them to the new moms and dads. I’m sure they’ll enjoy this delicious looking dish.

I love that you make your own cream of (fill in the blank) soup. I tend to pass over anything that asks me to add a can of soup, but I would like to make my own soup try your recipe.

You could sauté the onions with the carrots. Instead of pouring the broth/butter over the dry stuffing, would it work to mix them together first? I'm bad at pouring; miss spots!

It looks very good, It is basically the same mixture that I put in a pie crust and call it chicken pot pie. I also put in celery, mushrooms, and naturally being from Texas, I add jalapeno pepper.

You can steam your diced onion. In a coffee cup in the microwave with a very small amount of water. Micro for a few seconds. Then add to recipe.
