      Adzhana Malia fillings for Macarons are really quite easy but most chefs keep their signature flavors private until they publish a book... what flavours did you want? Check Pierre Herme’ s opus as he lists many of his flavour and ratios that are quite popular. The categories for fillings are chocolate bases, jam and jelly as a full filling or as a center including making a pate de 🍉 fruit, pastry cream, which as with chocolates for conservation, often use custard powder so eggs can be omitted... and buttercream fillings. If you need some recipes you might like to watch Callebaut, Valrhona, and other online videos and RUclips sources.... really, the shells are what drive chefs crazy- consistently making them well in all weather without significant loss. Hope this helps, if not sorry.

    What kind of baking mat do you use? Is it a silicone one? What's the tip size that you use for piping?
    In your next video, can you show the consistency of how a good batter would look like? My fold my batter until it can do the ribbon effect, but then it is too runny and it spreads too much when I get rid of bubbles.
    I'm sorry for all the questions but you make these macaroons look so effortless! 정말 고맙습니다

      2. the tip number is 805. (diameter 1.2cm)

    You're an expert 😍 I have no experience on baking I just watch some baking videos cuz it's one of my dream to become a pastry chef, so much for that. I think macarons is difficult to master.     Hello. You have a UNOX and a convection I’ve Did you do these perfect Macarons in the convection oven or conventional oven? Sorry but also, which tip did you use for decorations? #1? Or 001?They are lovely as usual. May you continue to rise!

      Her Unox ovens are convection ovens. Yes, she uses the convection feature always. Sorry, don't know about the tips she uses.

      tommydan55 so do you know if her UnOx are combi/ or convection only? I’m in Japan and most ovens,regardless, you can’t leave the door ajar and have the thermostat/ heating... there is a lock/ spring so I’m trying to figure out how she can leave her door slightly ajar and still keep cooking....

    How long do they go into the oven for? Like all your macarons

      As clearly shown in the video, after doing the drying in the oven, they bake for 15 minutes at 145C. Hers is a very high end commercial oven. Mine bake for 18 minutes.

    Sugar bean!!! In my oven i have a option of uper heating, lower heating or both side heating.... Should i use both side heating? I know its difficult to answer because every oven has different temperature and different system thought if u know then plz reply! ☺️🥰

    1. What is oven shower..??
    - The oven-shower is to wait 2-3 minutes without removing the tray in the oven after baking. (with open the oven door)
    2. How to dry in the oven..?? (high temp.)
    - 1st preheating - turn off - put the tray in to the oven (at this time the temperature drops to 90-100℃) - 2nd preheating - start to dry, until the temperature reaches 120℃ again (with open the oven door) - close the door and bake - oven shower
    Look at the subtitles in the videos, there is detailed temperature.
    3. What is the baking mat's name..??
    - This called a teflon sheet.
    4. How long do you whisk meringue or do macaronage with mixer..??
    - It's not important how long I did.
    Because we have different machines and environment..!
    You should check the cocsistency of meringue or mixture frequently.
    5. What kind of colors do you use?
    - Chefmaster liquid colors
    You can get it on 'Amazon.com'
    6. Please English subtitle
    - Sorry,, My English is poor..
    I can use only easy words 🤣

    7. Where is the filling recipes?

    - My ovens are UNOX 135 and convection type.

    - I made all templetes myself and I am not
    sharing now.. Sorry..! 🙏🏻🙏🏻
    10. Do you left or bake immediately..?
    - As I already explained, I do not leave it because I am drying in the oven at high temperatures for 2-3min.
    It is a very useful and convenient tip to reduce the time required.
    Also you can get shiny and smooth shells.

      네~~ 문 열고 건조하시고, 건조가 완료되면 온도 재설정 후 바로 문닫고 구우시면 됩니다 🙂 팬은 꺼내지 마시구요~~

      색소는 로즈핑크 + 크리스마스레드, 리프그린, 네온 브라이트 그린, 콜블랙 이렇게 사용했습니다 🙂🙂💕
