    Notes:
    1.To make yogurt in the Instant Pot, you will need a "Starter".
    The Starter is a small quantity of Yogurt. Growing up if we ever ran out of Yogurt, we would just borrow some from our neighbors/friends. You can also use store brought Yogurt.
    2.However with the Instant Pot, its possible to make your own Starter.
    In most Indian households, people use either green chilies, red chilies, lemon juice or tamarind to make the starter. The consistency of the end result varies based on ingredient used.
    3.In our attempt, we found that the starter made from lime was sour and the starter made using green chilies was runny (a bit like Dannon unflavored yogurt). We got the best result from the starter made using red chilies.(amzn.to/2QPxcN8)
    4. Its best to first make the starter using red chilies and then use the starter to make a bigger batch of yogurt. If a red chili is used to directly make a big batch of yogurt it might not be as effective and the results could be disappointing.
    5.We used whole milk to make the starter as well as the big batch of yogurt.
    6. Upon refrigeration the yogurt will usually last for 7 to 10 days before it gets sour. Sour Yogurt can be used as a face pack.
    7. When using Pot in Pot method, use oven safe bowls. No Plastics/Tupperware.

    Sandhya many thanks for sharing this video of how to make curd when we don't have the starter. After about 17years this first time I have successfully made curd in UK following your recipe, using dry red chillies. Previous times when I tried I have always got stringy and too runny curd. But this time I used your idea of using the first batch to make second batch and so on, which actually gave proper curd. So many rhanks for that.

    Thank you for actually showing this recipe “step-by-step” . This helped so much from temperature of the milk to keep whistle on vent mode to how much water to keep in the pot. Those are the tricky parts and people tend to miss it. Thank you much.

      @@acp7489 Its the dannon culture. For firmer yogurt, use red chili as a starter or firm yogurt as starter.

      I tried it, and can certify it is fool proof! However, I used store bought yogurt as my starter, do you think this affects how thick it turns out? What can be done to make the yogurt thicker? Thanks!

    Sandhya I tried out your yougurt recipe in instant pot and was able to get perfect gadda perugu in no time. You wont believe i tried many ways to achieve perfect set yougurt but always it would either be sour or too watery

    Ty, Sandhya for the detailed video. Does the yogurt have a hot spicy taste when using the peppers? I made the raita recipe you gave us & I have to tell you it was delicious with the black salt. I made it before with table salt but it wasn't as good. Tx again!😘

      You are welcome! No, the chilies dont change the flavor of the starter. The yogurt if creamy and rich and unflavored. Glad you liked the raita recipe!

    Hello Sandhya, when I left the milk in steam for 0 minutes you said to leave it in venting mode but I got a message my my Insta pot saying food burn....can you plz tell me if we should leave the milk in sealing or venting also when we select yogurt mode should we leave it in sealing or venting ?

    👍 Loved the way you clearly explained everything. I make 1L yogurt each week & have been directly using the inner pot in my multi-cooker (I don't have the Instant Pot). I liked your idea of using a small container & trivet, will try it so that I can make smaller batches of yogurt like you did (200ml). Btw, how much water should I add in the inner pot? Does the trivet need to be submerged in the water?

      Thanks! Adding a small cup of water is sufficient as shown in the video.Not sure about crock pot however.

      The idea of using red chilies/tamarind/green chilies has been around for centuries in India. I just adapted it for the instant Pot. :)

    How long will this continue making dahi? Will it last indefinitely as long as I save some dahi from the previous batch and culture again within a week or will it lose its potency and will need to start from scratch every time?

    Hi Sandhya. I tried to set yogurt in instant pot, but may be my starter was not enough or runny, it didn't turn out to be well. Now, I don't have more starter left, what should I do now. Should I set starter again and then try to set the yogurt again. And secondly, can I store my previously attempted lot and reuse. Thanks in advance 😊

      Dont use a weak starter it will not work. If possible try to make the starter again. You can also use store brought yougurt as a starter.

    I steam for 0 mins and to steam milk and after adding the starter, I use the yogurt setting for 3 hours. Yogurt is not sour at all.

    Hi Sandhaya, I followed pretty much all the instructions regarding steaming, but mine was in steam mode for quite a while and then it showed me Burn indication...whistle was in Venting mode as you said. Can you mention the time ?? I loved your method..please give me some input over this.

      You don't have to remove the ring. While in yogurt mode you can leave it in venting mode.

      Use your oven - turn the oven light on, it’s the ambient temp for yogurt fermentation.

    Question - When I steam the milk for 10 minutes, it doesn't stop automatically. I have to manually cancel it. Does it work like that?

      Yes steam function doesnt do a countdown. (Atleast not on my model)

      If the glass container is oven safe then yes. Check for markings under the container.

      Sandhyas Kitchen If you keep it for zero steam, does it mean milk is already pasturized ? If it is a fresh cow milk will you steam it for zero?

    Sandhya, so I tried making starter with red n green chili but my starter turned slimy what could be the reason... The only difference I did was I boiled milk on stove top. What is the right temperature to add chillies, Luke warm temperature means 110°f or more, please reply..

      Make sure the chilies have the stem attached. Thats where the bacterium is concentrated. Milk should reach a high temp once.

      Hello Shanmukha to make a starter you need chillies with stem . Stem is the key to create the bacteria required .

      Please try with red chillies with stem on. I wasnt happy with green chillies or lemon.

    In the beginning you said to put it on the sealing mode, but then how is it supposed to depressurize automatically? You didn't list a time to put it on. It doesn't do it automatically.

      Jeffery Scott Hello Jeffrey if you are mentioning the time i made the starter ... i have put it in steam mode for 0 mins and i have let it naturally pressure release . NPR will automatically let the valve go down after around 15-20 mins

    Do the initial ingredient used affect the taste of the yogurt? For example, does the starter of a red chili taste different than a started made with tamarind? I grew up in the US with only store bought yogurt. Can you explain how the taste of yogurts might differ?

      I experimented a bit with the starters and i have noticed the one with red chili turned a bit spicy and one with tamarind is a bit sour. The taste of yogurt depends on your type of starter , amount of starter and the temperature you are setting it in.
