What an awesome birthday surprise for Parker! A day on the Alaskan rivers fishing for SALMON! We brought home some beautiful Silver & Sockeye Salmon from this trip! Parker is 11 yrs old this year. Hard to believe, it's flown by so fast. (Insert tear) We're cherishing these sweet memories with the boys! Preserving all of this fresh salmon & sharing our smoked salmon recipe with you + a little "day in the life" as we begin insulating our chicken coop before the cold dark winter arrives! Smoked salmon recipe:
Cut up 7 to 8 filets into 1/4 to 1/2” strips
Brine:
1 gallon water
1 cup brown sugar
1/2 cup of salt (I use pink Himalayan salt)
Soak salmon strips in the brine for 4 hours & then lay them out on drying racks with a fan blowing on them for 3-4 hrs.
Then smoke the salmon for 3-5 hours, depending on the smoker you have. Salmon should be 135 degrees when fully cooked.
Simple egg salad recipe:
6 large eggs boiled & peeled
1/4 to 1/2 cup of mayonnaise
2 tsp dijon or yellow mustard
3 TBS finely chopped onion (any color is fine)
Salt & pepper to taste
I sprinkle some dried parsley just for pretties
Mix all the ingredients together & serve!

The freezer is quickly stocking up for winter with beautiful wild Alaskan fish. A full bowl of fresh chicken eggs on the counter from the girls & moose season is NEXT month! Nothing gets me more excited than fresh food for my family! What an awesome birthday surprise for little Parker! We had a wonderful day with the boys on the river. The smoked salmon recipe & egg salad recipe I shared are linked in the video description!😘An experience we'll never forget & surely be doing more of before salmon season is over. Mixing a little fun with work, we got most of the chicken coop insulated but we still need to finish the rest before the 1st snow fall. Little by little we're getting that "to do" list done while still enjoying all Alaska has to offer! Thank you to EVERYONE for the beautiful birthday wishes for Parker! Obviously fall is creeping in on your guys with the cold air forming vapors over the surface of warm water! And the winter coats!! From a suburb of Dallas, Texas which reached 110 today! That’s what we wear during the winter!!! Just sprinkling the outside brick walls of the house has cooled the inside of the house!! What a concept!!!
Brought the youngest (2 and 3 1/2 yrs olds) out of 5, (15, 16, 17) to Little Elm, TX inside water park! It was fun but not anywhere like experiencing growing up in New England! Exploring nature, Navigating the rocks through the streams, finding tat-blots, and salamanders under rocks,camping, going to Cap Code, Hampton Beach in Maine. Gardening with my Nana and Papa gardening eating fresh veggies and making PICKLES! I can’t say enough of how much your channel has renewed and restored my spirit and soul helping my 87 yr father battle bladder cancer! He and my mom (86) look forward to your posts! Thank you! I’m so very grateful! Blessings to you ALL!

All I can say Tina is that you are blessed and a blessing. I thought of Kellen while you all were fishing and I wondered how he processes what he’s living. Kids some times don’t get it right and it can harm they need some truths dropped in their paths. Does he compare himself to P. Does he understand why their is a difference in your relationship with P. It’s natural for you to have a stronger bond with P but you’re growing to love him more as time goes on. P is different from Kellen but different doesn’t mean better. He needs to find and embrace his talents they are there. Your choice to bring him to Alaska is so life changing for him. The memories and experiences, the stability, the belonging to family. God has smiled on him through you. Also, I wish that my husband would have been even half the man Joe is. Be thankful for him there are many out here that feel the same as I do. Thank you Tina for all you do.

I use molasses, sugar,and soy. When it comes to flavor it's pretty much the same. I love the taste of molasses, so that's why I use that instead of the brown sugar and I always have regular sugar at home. Maple syrup is good to.
Sometimes I'll smoke it then can it depending on how room I have in my freezers after a summer of fishing. Some years are better then others.
