Ahoy everyone!
My name is Nike and I have been living and sailing on my sailboat Karl since 2013. After a massive refit marathon, I finally cast off the lines and learnt to solo sail my 37-foot Reinke Super 10 that I called "Karl". I am publishing videos (at the moment every two weeks) about the ups and downs of living, repairing and sailing my boat.
Since January 2022, I have a new permanent crew member: my furry friend Boga. When I started out, I did not know much about boat repair or solo sailing. Since I am still out there, I hope that my story inspires others, to chase their dreams, even if they might think they are not cut out for it. There is always a way, so I'll see you out there!

So glad you had the chance to have raw milk to work with . I owned a dairy and we only sold raw milk it's the best sweet and had body to it as I would skim the cream off the top to make butter . Thus is so good for you now you have a skill for years to come .

I miss having fresh milk. We used to make our own butter and it was the absolute best! And very easy to make!

Wow! this is definitely one of my favorites! I brew my beer and kombucha, but I've always wanted to get into cheese, too. This was so cool, basic, organic and natural, and with little reliance on the modern world that most of us rely on. So jealous, you're doing this kind of things in such cool places! The cheeses look amazing and yummy! Oh, and I love the doggy Buah(is it?). And another thing ....that wasn't the first cheese you made...we make cheese on our body all the time...lol....and it's all good

I grew up with Manual Milking. He was a nice guy. LOL. Actually my grandparents had a dairy farm with about 20 cows , he milked with machines. Later on in my life I took care of a cow here and there for other people. Eventually I had dairy sheep. That is the best milk on the planet.
And regretfully, with all that milk, I had not ever made cheese ! Paul is so cool !
Like it. I've never made cheese, but I remember aunt Mary making it in her kitchen way back in 1961. She used to fill her days cooking and baking, stotties and coffee cakes were my favourites.

I loved seeing the cheese making!
Making cheese reminds me of making home baked bread . The prep is easy , the waiting for the dough to rise is the hard part . As in bread baking , the cheese process is slow and you must be patient , but at the end you will be very satisfied .

I will need a welding pen and some old plastic containers.
Hopefully the bacteria in the cheese will take care of the "hygiene" process. L
But in fact that gave the desire to make cheese myself!
I have to say scraping the rind from an existing camembert to make new camembert is brilliant.
We need a picture of that page from Paul's recipe book and what to do with the "petit lait" (whey) as we call it in French.
It is always a bit sad to see all that plastic laying on the beaches.

Wenn man den Bogen einmal raus hat geht es auch Händisch recht leicht , stimmt aber das es leichter aussieht als es ist zumindest am Anfang .
Frische unbehandelte Milch schmeckt ganz anders als die aus dem Tetrapack ich mag den Geschmack sehr und stelle oft Joghurt daraus her.

Great episode again. Thnx for that. I live in the countryside in Holland and that means your neighbours are farmers. Milking cows is still done by the women, while the man puts his lazy ass on the seat of the tractor. The woman generates income, whereas the man burns diesel. I guess it works both ways as milking uses a lot of electricity these days. You talk to Boga. Good thing. Dogs understand. In my opinion better than humans. As you said...Boga sensed your anxiety. Dogs do not talk, but they understand. Learning to read their body language will give the answers. Yogaboga may help. Now to your questions on hygiene transporting the fresh milk. Personally I think that most people in, what we call the modern world, get sick due to an overkill of hygiene. Your thoughts? Finally. The French and the Dutch are famous for their cheese. I am Dutch, Paul is French and you are German. Why are Germans not known for their cheese. So gave the answer yourself. And Paul has a Dutch flag at his stern. Why?

in my area (I live about 50km north of Lüneburg) the job of milking the cows was a mans job. They were refered to as "Schweizer" de.wikipedia.org/wiki/Schweizer_(Beruf)#Schweizerei
