  • We're back with more British cheese! While we've tried some of these types of cheese before, we're trying new creameries and variations. We sample: Stripey Joe, Red Leicester, Challenger IPA Cheddar, Stilton and Wensleydale with Lemon and Honey.

    Cheshire is one of my favourites, crumbly with a nice flavour. Double Gloucester is great for toasting. What I do is make the toast, slice Double Gloucester on top, sprinkle with Worcester sauce and then grill, it tastes great. I remember going home to England and finding a cheese market near Covent garden and trying Stinking Bishop, I loved it. I told the guy I wanted to take some back to the USA. He said you will not be able to take it on the plane and before that you might be thrown out of your hotel. Seems as if you need a lead lined box to transport it.

      🙂We're still on the hunt for Stinking Bishop. We can get Limburger and sometimes Epoisses at specialty cheese shops. Not sure how their stink compares with Stinking Bishop.

    I always use up the onion juice that is left in the jar, sprinkle it over salads, add it to sauces. It's like vinegar, but just better with the onion flavour.

    With white, salty, crumbly cheeses like Cheshire, Wensleydale, Lancashire or Caerphilly, I prefer to pair them with Piccalilli. Branson or similar with blue cheeses and pickled onion or gherkin with red cheeses like Red Leicester or Double Gloucester.
    Oh, and pickled beetroot goes with all of them.
    Best grilled cheese sandwich = Red Leicester, Marmite and thinly sliced red onion.

    Changing the subject (but still food related 😉) today….at my supermarket, I served a customer with…….. fruit cake “American stylie”!! From our “international aisle”!
    Well, I studied it as carefully as I could and…came to the conclusion that it is NOT a “fruit” cake and possibly, here in the UK, the manufacturers could be ‘prosecuted’ under the Trades Description Act as the product itself did not contain ANY real fruit only those coloured blobby bits! The Company would probably be required to call it “fruit flavoured” to excuse the fact that it didn’t have anything fruited in the cake itself. It’s like chocolate over here - to qualify as “chocolate”, each product has to contain a specific minimum quota of cocoa solids, if it doesn’t, then the product due to the Trade Description Act has to be termed as “chocolate flavoured”.
    I have to say, it didn’t look very interesting and there wasn’t many blobby bits in it anyway! It just looked like a very dry sponge cake.
    That cake is the only item that has been able to be added to the USA shelf in our International Aisle - Lucky Charms breakfast cereal arrived about two months ago? And it seems to be a very expensive bowl of sugar!! 😳😲

      I'm not sure what that fruit cake is that they're selling! Usually the blobby bits are glace cherries colored red and green. Sometimes it includes other fruit and nuts. The cake part is typically very dense, more dense than any fruit cake we've tried from Europe or the UK. Still, not a favorite for us!
      Lucky Charms...not worth it. We weren't allowed to have sugary cereals as kids so never developed a taste for them.

    The stripey Joe cheese goes by the name 5 counties cheese here in the UK

    Caramelised onion chutney goes with most cheeses. Plain wensleydale is my favourite

      We've had caramelized onion jam with cheese - I imagine it's very similar. Very good!

    You can add British cheese to lots of different foods. Stilton with steak and mushrooms. On top of apple pie. Also there's a white Stilton that does come with different types some with fruit. When it comes to drink cold beer, cider, and white wine all go well with cheese.

      I like some fruits with cheese not in cheese. We get a lot of Californian wine tasting in Britain they go well with anything. The key thing is we get so much choice. We have over 2000 registered cheeses. That's why we don't have to have a favourite.

      Yes. That's what makes it interesting. With other cheese from around the world as well we are spoilt for choice. The only thing we get from America is in a can or burger cheese sadly.

      @@neilgayleard3842 that's too bad and why other countries think that's all the US has to offer for cheese. Earlier this month, the first lady chose some American cheeses to serve Pres. Macron at the White House state dinner. Two of them we've tried on our channel.

    Cheshire is similar to Lancashire. White and Crumbly. The layered cheese is common, especially at Christmas

    Red Leicester is one of my favourites. It's a really good melting cheese, and makes a really good cheese-on-toast.
    I have a "fancy cheese-on-toast" that I like to make sometimes that's Red Leicester and Thai sweet chilli sauce. Grill the cheese-on-toast until the cheese has started to go melty, then spread a thin layer of sweet chilli sauce over the melty cheese and put it back under the grill until the sweet chilli sauce has caramelised a bit (the only reason I do it this way is so the sweet chilli sauce doesn't burn before the cheese has melted properly if you put it on at the start). I can only speak for myself, but I think it's delicious! 😋

      Agreed - Red Leicester is one of those cheeses that transforms when melted and has a consistency of its own. Lovely stuff - also worth trying a little grated Red Leicester on pizzas

    I live in Melton Mowbray which is home to Tuxford & Tebbutt 😊🧀 ..The best Stilton in the UK.

    This time of year a traditional tea-time treat is to have a wedge of a crumbly white cheese like Wensleydale or Caerphilly, a thick slice of British Christmas cake and an orange and you alternate bites of each. The rich fruit cake is set off nicely with the sharp cheese and the fresh fruit.

    I love cheese with Branston pickle it goes so well together, we always have cheese and crackers around Christmas time, this year i couldn't get a selection box of different cheeses as the supermarkets near me had sold out, so i got a smokey cheddar instead which was nice, also love pickled onions and spring onions with cheese, the only one i wouldn't eat on your plate is the Stilton, its too strong for me.

      @@keza92 which blue cheeses u had which put u off the taste have u tried Yorkshire blue is like red Leicester in colour although tangy its quite creamy taste when eating it.

      Stilton is rather strong! We have a Monterey Jack cheese called Sonoma Blue. It has a bit of tangy blue flavor, but much milder than a typical blue cheese.

    at the wensleydale creamery in Hawes they have a tasting room where you can try any of their cheeses for free, in fact when i was there one really old guy went to all the cheeses he liked ate them & left, when i mentioned this to the counter assistant she said he did it every day lol sort of supplementing his pension

    Great selection and mostly local to me, Tuxford and Tebbutt are based in my home town Melton Mowbray, not far from (Red) Leicester, and Rutland :)

    We have some great cheeses mixed with alcohol especially at christmas theirs a cheese thats been mixed with port, fantastic, rich and still creamy. ive done my own pickled onions I grow a lot of fruit and veg, I have a big garden, its great making your own pickles, even if you have to buy the veg rather than growing them. I would love to see you trying out an artisan cheese kit, even if it didn't turn out as it should you would still learn a lot about the cheese making process, I always think that anyone that really loves cheese should have a go at making their own.

      I'm glad to hear you say that. We found a cheddar with port that I can't wait to try out in an upcoming video. I've made cheese about three times. I did a video of making goat cheese which was a little trickier. I look forward to trying to make a new cheese with my new kit! They all seem to be for fresh cheese so I've never tried aging.

    Traditionally red Leicester is quite a strong cheese with a nutty flavour. In the UK cheese has a strength rating on the packet, for example mild cheddar is 1 medium cheddar is 2 and mature cheddar is 3, red Leicester is usually either a 2 or 3 but it won't say medium or mature on the packet, you just have to look at the strength rating.

    You should try a pickled egg , if you haven’t already, very popular pub snack with a packet of crisps. ..I adore cheese but VERY mature Cheddar and a Wensleydale ( no added fruit though ) are my favourites.. followed by a Gorgonzola Dolce …bliss.
    I love nothing more on a summers day than salted almonds , and a glass of dry Chablis .or if in Florence a Pinot Grigio 😂❤️

      We would probably have to make our own pickled eggs as we haven't seen them here. I would like to try Wensleydale without fruit, but haven't found it so far. We'll keep looking! 🙂

    You should try Caerphilly a really distinctive cheese from my homeland , Wales. It is a bit like a hard feta. Deliciius

    Cheshire is white! I haven't seen the multi layered cheese.
    Silverskin onions are the best.
    I prefer walnuts with cheese.
    Wensleydale with apricots is great.

    I love cranberry sauce with stilton, if I don't have the cranberry I drizzle a tiny bit of honey on the stilton. The fig spread also sounds great.

    There used to be a lovely one called sage Derby, I've not seen it for a while, it was my favourite. I hope it's not exctinct.

    Love your tasting session videos! These cheese ones are my favourite - have you tried Wensley Dale with ginger? That with a digestive biscuit is very more-ish. From my cheese stall I am able to get 3 goat cheeses from Ribblesdale, the goat, the aged and the blue. Enjoy!

      We haven't tried Wensleydale with ginger. Not sure that we've seen it, but new ones always pop up for us. I think we've seen it with cranberries, blueberries and this one with lemon and honey. Haven't found it just plain.

    I love a striped cheese. The best cheese for me is extra mature - the one that makes your cheeks suck in. A digestive biscuit is also a nice addition to have with cheese.

    What you should try, what you should really really try…is some Stinking Bishop! I haven’t 😉but I so would, if I could! As for eating cheese with almonds….. ooh not suuuure about that one 🤔🤔

      @@sunnyshine2215 u can't beat the original Yorkshire products like Yorkshire blue & Yorkshire Hard Water Tea another good 2 out God's County
      If you have hard water where u live try hard water tea bags u see massive difference

    I like that you are always able to get new different cheeses. The multi layer and flavoured cheeses seem to arrive around Christmas years ago to appeal to everyone of your guest who come around. Wensleydale on its own is worth trying and can taken other flavours. All the best for the up and coming New Year happy cheese hunting

    Cheese and onion sandwiches are often made with sliced red onions rather than pickled onions.

      @@FinnLovesFood You can also buy ready made cheese and onion sandwiches in supermarkets. They're made of cheap grated cheese, too much mayonnaise and chopped onions. They're not very nice at all! Far better to make your own.
      I don't like mayonnaise so would give that a miss, but I do like salad cream, but don't overdo it.

      @@FinnLovesFood In my opinion, Heinz salad cream is far nicer than mayonnaise, it has a sharper taste. Use less than you would mayonnaise.

    I had my snack this evening while watching your video- Barber's Vintage Cheddar cheese with Nairns multiseed crackers. My surname is Barber so we often pick up this cheese- its got those lovely crumbly mature bits in it- yum! Yes we do get layered cheeses but mainly at Xmas I think and I also love pickled onions- nothing wrong with using your hands. Great in a rustic sliced sandwich with a mature cheese paired with walkers cheese & onion crisps. XOXO Ps...I could talk about cheese all day long, typically we have about 8-10 different cheeses in our fridge at any one time and I even had a cheese and wine tasting birthday party a few years ago which was so much fun- the wine pairings were just fantastic. Have you ever tried quince jelly? Really beautiful with a ripe aged Brie. I live in a hamlet next to Dymock where Stinking Bishop is made- a quick search led me to 'Murrays Cheese' & Plum Plums cheese in the US- you may be able to get it shipped to you.

      We've seen Barber's cheddar at Whole Foods and I'm pretty sure we've tried it at some point. Your fridge sounds a lot like ours! 😀 Your birthday party sounds great. I remember one year my birthday fell on the same day the American Cheese Society had a public tasting event during their conference which was held in Sacramento that year. I couldn't believe how much cheese there was and you could go through and sample as much as you wanted. I got so full and had only sampled a small fraction of cheese! They had wine sampling too. I did find a place that ships Stinking Bishop in the US, but shipping was almost $55 for half a pound of cheese! We haven't tried quince jelly yet, though I believe we've seen it at the store.

    Cheshire and Lancashire cheese are very similar, crumbly and white cheese usually, I noticed that you still have some pickled onions left, if you save the vinegar from them and put them it on chips/ fries, I'm sure you'll enjoy the flavour you get, waste not want not, the hard cheeses, Cheddar, Red Leicester, Double Gloucester go with anything, I think it was Tina's idea to do this video, my mouth is watering 🧀😇

      @@FinnLovesFood He wouldn't dare object, mind you tasting such beautiful food like cheese, who could object, I've often wondered who came up with the idea of cheese, how did they know how to make it, we live worlds apart and yet we can enjoy one of the basic things in life, marvelous, hope you're not getting any of that East coast weather, so very sad to hear about those people who have died during those snow storms, God bless you

      @@FinnLovesFood So glad that you're not experiencing those horrible weather conditions, but we do see your wild fires in California, rain, well we seem to get enough of it from our lake District about 100 miles away, I suppose we take it for granted that cheese and water will always be with us , it gets to me Tina, cheese made from sheeps milk from those Cumbrian hills , always ask your cheesemonger for a little taste, I wish I could go into the pub and ask for a taste, beer and cheese goes well together

      @@mikeriordan6940 if we get plenty of rain and have a longer wet season, it will help delay the fire season. Free cheese samples are the best! Several years ago we hit a slow day at the Cheese Shop in Carmel. We got so many samples and they even gave Finn samples. He was tasting some very expensive cheese! 🧀Some of our restaurants let you get a few sample glasses of beer before you buy.

    Never seen that stripy cheese here in the UK. I'm a blue cheese fan so a ripe gum stinging English Stilton or a gooey French Roquefort are some of my favourites. Branston seems to go best with hard cheese & is available in large (original) or small chunk varieties. Pickled onions are a Christmas favourite with cold cuts of meat. They are also found on the counter of old school fish & chip shops along with pickled eggs.

    a christmas we have a cheese border with many types f cheeses, from french, german, dutch and american, i always get cheese as a christmas gift because i like it.
    red leicester i have grated over baked potato and melt it until it crisps up.
    i have all my cheeses with the Jacobs selection box, many types of crackers to choose from, a bit of butter made from goats milk makes a tasty snack...
    we also do the pineapple and cheese on a cocktail stick hedgehog, a raw potato covered in foil, then cheese and pineapple skewered on cocktail sticks for its spines.
    blue stilton i have on toast, crackers, melton on beef steaks, with broken bacon in salads.
    the layered cheese is well known in the UK i usually use it for coleslaw, grated and mixed in.
    what i do like is a nice fried egg with chedder cheese grated on top and placed in a nice french small soft loaf.

      We have a few companies that offer the mixed cracker selection - so nice. I don't think I've tried cheese on a fried egg, but often have it on scrambled eggs.

      @@FinnLovesFood when we go to cattle auctions i always have a fried egg burger with cheese on top, the ones we have are massive burgers, they use a tiger bread cob as we call it, large bread bun bigger than your hand, filled with burger and salad with a fried egg in the middle and grated cheese really good value for money too.. around £5.50 = $7 or there abouts... sometimes if mandy is is working i have fried onion with it as she does them how i like fried onion, some places they over cook onion and to me its rancid when over cooked.

    Bit of a coward when it comes to block cheeses, maybe stemming from a finnicky childhood. I do like cheese biscuits and Philadelphia/Dairylea cream cheeses, but that's about as far as it goes. The names such as 'Stinking Bishop', and the malodorous aromas - I seem to recall you saying something like not 'inhaling' when tasting certain cheeses - does nothing to entice me into giving them a try! Onions too, are something I avoid, though I do appreciate that (in moderation), they add to the taste of some dishes - early in my career, I remember a workmate, who at lunchtime, as an accompaniment to his sandwiches, would chomp on a whole onion as if it were the juiciest apple!😲Anyway, I still find your cheese vids interesting. A favourite snack over here is welsh rarebit, a toasted cheese sandwich-type thing, have you ever tried it?

      We do love onions too, but can't imagine eating them like an apple! Prefer them accompanying other foods. How do you feel about garlic? We haven't tried Welsh rarebit, but it's something we'd like to try sometime.

      Stripey Joe was new for us - fun to try out. We haven't seen it in Trader Joe's recently so maybe it was a limited release. Kind of like the Lancashire cheese we got there that I miss so much! 🙂

    I haven't seen a layered cheese but I've seen cheddar and red Leicester mixed together with jalapeños (aka Mexicana brand) and off brands

      Our pepper cheese is often pepper Jack. We picked up a cheddar with chilli and lime from the UK we plan to try soon.

      Did you know mini cheddars do pepper jack flavour? (they're fine)
      I've had a chilli and lime cheddar before (when I mentioned the port infused cheese) and although enjoyable on a cracker in small doses I didn't feel that I liked it enough to buy again for the price compared to just buying a block of mature cheddar. I didn't get much chilli but you do get a lot of lime

    Yep u right on there Tina 100% Correct Cheshire is crumbly one really nice cheese but falls apart very easily, u certainly getting into your English heritage. Harder cheese like u trying are OK send through US Customs, however lot brie softer cheeses are forbidden to be sent to USA via Customs, one reasons u won't see lot softer cheese from uk as Customs only allow certain types cheeses into America.

      Stinky Bishop should be OK as hard cheese

    If you get to the UK you have to visit Cheddar Gorge. The layered cheese is more gimicky. I would never serve on a cheeseboard for guests, as these cheese in it is just bog standard nothing special.

    Cheshire and Lancashire ( where i'm from ) are very similar in texture and taste and seeing as both counties border one another it's no surprise that they're similar , Lancashire is lovely mixed with chives and made into a pie , mmmmmm have a happy new year
