Sausage Rougail, emblematic dish of Réunion Island with tomatoes & chilies! + Turmeric basmati rice

I’m going to show you how to make Rougail, it’s an emblematic dish of Réunion Island.
We love its flavors coming from tomatoes, chilies and sausages. You can enjoy it with turmeric basmati rice.
👩‍🍳 Ingredients for 6 to 8 people:
1 lb fresh sausages
4 smoked sausages
10 oz onions
1 oz garlic
1 tbsp grated ginger
4 cups canned tomato
(or 2 lb ripe tomatoes)
2 bird’s eye chilies
2 green chilies
2 mini sweet peppers
3 spring onion
A small bunch of thyme
½ tsp salt
½ tsp ground pepper
1 tbsp turmeric
1 tbsp vegetable oil
Turmeric rice:
1 lb basmati rice
3 cups water
2 shallots
3 cardamoms
5 cloves
1 small sprig of thyme
1 tsp turmeric
½ tsp salt
A pinch of ground pepper
3 tbsp vegetable oil
