I loved the video, and the art was amazing i only hope i can consistently get that kinda milk down. but i ask for the latte videos out there where it’s not just. for the latter art, and it’s being sold: why does no one really ever care that shots expire after 10 seconds? just the taste of espresso beverages is SO much better & more balanced when the shots aren’t expired :(
Hello! Based on my own knowledge of coffee, espresso shots don't "expire", but after a while, the quality of taste will become different. If we think about it, a well-extracted and balanced espresso shot should take around 18-24 seconds to extract, then if we base it on the rule of 10 seconds, the first few drips' of espresso would have long gone expired by the time the shot is done extracting. Good quality espresso should still taste decent after a while. Sure, the taste won't be as nice as when it was first extracted but it shouldn't go bad. I remember there being such a rule back when I was working at Starbucks years ago but after working at independent coffeeshops, I learnt that the "10 second" rule was just to stop partners from using old shots.
