Have you checked your thyroid? I had very similar feelings like you, I gained about 40kg in 1.5 years despite me being very athletic and with a normal eating habits. I tried very hard to lose weight but nothing worked out. Then I got diagnosed with hypothyroidism, got medication for it and currently i've been able to lose 30kg so far.

That's also one of the things I suspected but the last analysis came out normal... But I also I've been told that I need to ask for some more specific tests

    (tw weight)
I've been struggling with my weight for a long time and it turned out it was because of meds I had to take so, we couldn't do much about it. I've lost 30kg the first two years after I stopped taking them, without changing anything in my routines. Then I gained back 10kgs the following year (but lost two sizes, because remember, muscles is heavier than fat !).
I know how demotivating it can be but I kept a few things from that time : first, working out everyday is a big no-no. It's not healthy, it's damaging to your muscles and ligaments. I've been advised to take at least one or two days off each week. Even pro athletes have days to rest, your body needs it.
Also, your sleep schedule plays a lot in the regulation of your diet and exercice routines, I don't know for you but it was the first thing I had to fix and the rest came so much easier.
And finally, although it can be dreading, slow and constant results are far better in the long run than brutal weight drop (a diet or a regime that makes you loose a lot of weight in a short period of time has usually at least a 90% fail rate as you'll just gained it back when you stops, and often even more, especially if there is a medical or unknown reason for your weight gain). It's even bad for your heart and bones to lose weight at high speed. My doctors were alarmed the first months as I lost almost 2kg a week, but thankfully it stabilized later.
I wish you the best, it was so good to see you happy with your family and enjoying new ballet-related opportunities. You're a sweet light in my viewing routines on youtube.
