How To Make Chilli Con Carne When You're BROKE!

  • Chilli con carne is one of the best struggle meals going. It's easy to make packed full of vitamins and other good stuff, it's tasty and of course it's cheap as chips. I've re visited my old chilli con carne recipe, stripped it back a bit and made it budget friendly to help you combat this cost of living bullshittery. The secret to a good chilli con carne is building layers of flavour by browning the meat, cooking out the spices and reducing it down to a nice thick meaty sauce. No one wants a runny insipid chilli!
    Some of the ingredients I already had, but I suggest going to your local store and buying a bunch of spices to store in your cupboard. Having the spices on hand is going to elevate your cooking and make your food a bit more exciting, so you can look forward to your food. Remember, food is a key component to improving your mental health, and we need all the pick me ups we can get right now.

    To make my budget beating chilli con carne you will need:
    Feeds 4 people with rice
    ►500g of minced beef
    ►1 x 400g can of chopped tomatoes
    ►1 x 400g can of mixed beans in sauce (or regular red kidney beans)
    ►2 tbsp of tomato puree
    ►2 cloves of garlic
    ►1 large red bell pepper
    ►1 med sized red onion
    ►1 tsp of ground cumin
    ►1+1/2 tsp of smoked paprika
    ►1 tsp of dried oregano
    ►1 tsp of ancho chilli powder (optional, you don't need this if you haven't got it)
    ►400ml of beef stock
    ► About half a tsp of dried chilli flakes, or more if you want it extra spicy
    ►A small handful of chopped coriander (again optional)
    ►Salt
    ►A little oil for frying the beef
    Serve with rice, whack it in a jacket spud, or serve in tortilla wraps with salad and sour cream.
    Here are the costs for some of the items I bought as of 27/10/2022 at Lidl
    ►Beef mince 500g £2.49
    ►Rice 1kg £0.45
    ►Mixed beans 400g £0.59
    ►Chopped tomatoes 400g £0.28
    ►Red onions x 3 £0.85
    ►Beef stock cubes x 12 £0.55
    ►Tomato Puree £0.39
    ►Red pepper £0.42
    ►Garlic bulb £0.55

      I wish we had stuff like that here. I also really really want to try a proper southern crawfish broil with the potatoes and corn and it gets thrown on a table and you help yourself. Looks amazing

    Great video! I like how you show that sometimes things don’t go to plan (the rice). People can connect with your style and feel that they should be brave and try your recipes, which will also build their confidence. In the end they will get a tasty dish and with practice they will get better and better and with your great budget tips they can save some money too.       Yeah it’s one of my favourites this - I make it when I work nights does me 3 portions so no need to worry about cooking for 2 shifts, just microwave it. It does nice with some store brand Mexican style rice, only about 70p a bag.

    Looks yummy. When I'm particularly skint I use less mince but add a tin of green lentils. You barely know they are there and they are good for you. Great to have you looking out for us Adam. Keep up the good work xx

    Easy rice tip Adam. 1 cup Basmati in a large bowl, salt it, and pour 2 cups of boiling water over it. Cover & microwave for 12 minutes, then fluff it, cover with a tea towel and let it sit for another 12 minutes

    Thank you for this yummy and affordable meals . You are very sweet and caring The supermarkets here in Australia said they have lowered and locked in their prices till January on certain items . What they forgot to tell people before they mentioned this benevolence they had hiked up the prices . Smart shoppers who knew their prices were not fooled .

    nice one as usual Adam. this seems to be a bit of a challenge as to who can make the best & cheapest chilli and what with the likes of Aldi/Lidl for a budget meal. I always tend to make enough for a couple of days and tend to find that the extra day tends to marinate more and bring out more flavour of the dish. i have also recently invested in a vacuum sealer for my food in order to make food last longer.

    I use frozen mixed peppers from Farmfoods which are cheap as chips, just chuck in a handful and put the rest back in the freezer.

      @@Adam_Garratt a spoon mostly depending on what part of the country you live 😂 but I like cheese onions or tortilla chips for dipping. Chili is more of a thick bean less soup in Texas and I’ve seen it offered with rice 👍🏼❤️

    That looks very nice. Quick and easy to cook as well.
    I don't like spicy food, curry and so forth. I do like chilli con carne though as long as not too spicy. Of course you can adapt to your own taste when making yourself.
    In terms of the rice. I usually rinse it in hot water to remove the starch after cooking. Then it's not sticky. The best rice is bellissimo. Always light and fluffy.

    Lush! There's a few ways of improving cost efficiency/energy saving. The diced red peppers can be cooked at the same time as the mince is browning. The diced onions can be softened fast-fast-fast by 1m in the microwave. Rice water, while boiling, can be spooned/ladled into the main dish with a stock cube already going, thus the water is already hot and doesn't need bringing to the boil. Fabngrooveybaby :-)

      Yes correct, Mexican/tex mex tend to use whole cuts of meat. This is a sort of British adaptation if you like.

    This looks yummy, personally i rarely add beans.
    I think cheap rice is best for chilli con carne as the sauce mixes and becomes a bit creamier like with pasta water and cheese.
    My addition of cheese is a dairylee slice on the rice, then the chilli on top of the cheese.

    Adam have you discovered Chipotle Sauce ??? Addictive blend of tomatoes smoke & heat. So goood! Here in the US Frontera brand $1 a small can. I even add it to ketchup!

    On one of my early trips to Serbia I saw what I can only describe as an oversized apple corer. It is used to remove the stalk and core from peppers. Needless to say I bought one.
    I think that it might be interesting to compare the costs and tastes of both the budget and better ingredient versions - most definitely NOT the 'as expensive as you can make it' version as some on here try to do. After all, a good recipe is intended to make the best out of the available ingredients, and can just as easily be ruined by ingredients of too high a quality as an economy too far.
    I have found that the budget tinned tomatoes and puree can be a little bitter, however, this can be mitigated with a little sugar, or as Mary Berry has used instead of sugar in some recipes, redcurrant jelly. Ironically, one of my favourites and surprisingly good value being Waitrose Essentials!
    I have a preference for Hungarian over Spanish paprika - it has much more of a depth of flavour, although I have never managed to find it smoked, and it can be a little lacking in the heat department. Although, rather than adding chilli flakes, I prefer to use tabasco.

    P. S. As you quite rightly noted, meat is the most expensive ingredient. Have you thought of experimenting with ways of making it go a little further?
    I am thinking of combinations of added veggies such as grated carrot, finely chopped mushrooms, tofu, or even in the case of beef mince, the addition of a little of the much cheaper pork, chicken or turkey minces.
    In my experience the amount of onion can often be increased by at least 50% from the original recipe.

      Haha you spotted that well. I sometimes have to take separate b roll for the thumbnail and b roll because either there's not enough day light left after filming so have to do another 'stunt plate' the next day. Or the aesthetic isn't quite right, a load of cheese dumped on top of a chilli wouldn't make for a decent photo unfortunately 🤣. But well spotted

    Great recipe. I make chili, a cheap or expensive version, about once a month or so. It's a great dish, I like how customizable it is.
