Thomas, Yes I plan to at some point, but don't know when I'll have time to create BOM and instructions. I might just release parts as I get them written up, like head, arms, etc. Most likely won't be until later in the year tho.
Many servos are noisy due to the drive train and gearboxes. There are not many that are quiet. Servos like Dynamixels are quiet but also very expensive. Best to buy and try several brands in your price range and test them. All links for servos used for the head and neck and arms can be found in the description of those videos.
That's a lot of weight. To move that its going to need some kind of gearing which will slow down the output of the motor. It's always a balance. I don't know what your budget is but it's probably going to cost a lot.
