Gday mate, welcome down under. I’m in Adelaide, lived in Sydney 2010-2019, I’ve been to Vietnam 4 times. In my humble opinion, you need to go to Cabramatta, and as previously stated by another, Marrickville is good for Banh Mi but the best in Sydney I believe is in Mascot. Go early though and beat the queues… some great places here in Adelaide too. 👍👍

The 3rd dish here (egg like dish), a lot of Vietnamese eat this in restos. I was in Vietnam 2 weeks ago. I also was surprised by the price of the food. So cheap. My wife and I went to an Eatery. We pointed out 2 pictures. We were only expecting a bowl of beef noodle soup and a platter of fried rice paper wrapped spring rolls however, after 10 mins, the owner brought out a big bowl of beef soup, a big bowl of meatballs soup, a platter of fried spring rolls wrapped in rice paper, a big plate of sprouts, leaves and herbs, 2 small bowls of rice noodles and 2 iced tea like drinks. All for $6 USD. It was just supposed to be a snack but turnt out to be an early dinner.

The roasted pork is a new thing in australia. Now everyone wants the roasted pork. When I started getting banh mi in Sydney in 2000, before they were as popular, it was always just the standard pork roll (type of Vietnamese lunch meat), pickled veg, pate. Now I reckon the benchmark is the places that will roast pork belly as opposed to those who just chuck in some packet crackling from a bag to make it crunchy.

Like Max said, it's just different, due to historic immigration. And all purely due to the Cold War. Southern Vietnamese immigrated out to Western countries like Australia and the US, while Northern Vietnamese immigrated out to old Warsaw Pact countries like Poland and Czech Republic, post Vietnam War, and this is reflected in the Vietnamese food in those countries. The strong love for crispy pork is quite an Australian thing. Another Vietnamese American RUclipsr, 'Kyle Le Dot Net', admitted that Australian Vietnamese food is higher quality than Vietnamese food in the US.

Random YT recommendations are always fun. I have to travel at least 65km to get decent Vietnamese food in QLD. Well, there is 1 place on the GC that does great pho, and 1 place that does great Banh Mi, but in Southbank you can get them both along with everything else.
