Legend, Myth or Real? If the New Jersey Hard Roll still exists, it's pretty hard to find. I tried.

  • It's been both a running gag, and a serious dispute at the same time.
    Growing up in northern NJ, a hard roll was everywhere, but yet, a special treat when I was young. Sunday morning after church we picked them up at the deli, and then we each personally selected our doughnut from the bakery. Wow! That was the fifties and sixties. In the seventies, I was always working and could have whatever, whenever, but a deli sandwich on a hard roll was THE BEST! All over north Jersey, every deli, Quick-Stop and coffee shop had buttered hard rolls made up and ready to go out the door with your coffee. Ah, but times change.
    Living in Florida for four plus decades I'd always look forward to a trip "home" and promised to bring back a dozen or more. In the last 10 years that deli is gone, I can't find them, and have come back empty-handed.
    Refusing to believe that they've fallen into the dust bin of history, I recently decided to get serious about my search. My wife says I'm a food snob - especially when it comes to freshness, and now that a decade has passed since I had one, my expectations may be too lofty. Hmmm. But, I remember them. I mean, I really do. We just did a trip - and our search was great fun, be it unfruitful.
    This little video was intended to mock my obsession - not the products we found throughout our search. Everything was actually very good ... it just wasn't what I was looking for.
    Disappointed, but unfazed, there will be another attempt. I have hope - and a few ideas.

    I also grew up in Northern Jersey in the late fifties and Sixties. In a town called Hawthorne. I can remember camping out in my friends backyard and about 4am we would go to the closest bakery. (about 2 blocks away). to see the the bags of hard rolls get left on the steps of the bakery for when the baker came to open. We would always take one and leave a quarter on the steps. Then we would go back to the tent and eat them. Pure heaven.
    I was in NJ a few years ago for a funeral and went to breakfast with a friend that still lives there. We ate at the Goffle Grill on Goffle Road in Hawthorne. I ordered a Taylor Ham, egg and cheese on a hard roll and it was an actual hard roll like we grew up on. Poppy seeds and swirl all there. It was delicious. Took me back to 1969.
    MY Ex brother in law (also from NJ) Opened a Bagel shop and deli in virginia. When I asked him why he wasn't making hard rolls? He said that it take a certain machine to make them and it was too expensive for his operation. That could be why we are seeing them less and Less. Although Anthony's and Sons looked like the real thing to me.

      Grew up in Haledon. A hard roll, with Taylor Ham, cheese and eggs were the best.

    So I’m currently on RUclips looking for hard roll recipes, and your video popped up.
    I grew up in central Jersey on the shore. My dad owned a deli and we would sell tons of buttered hard rolls every morning, just as you said, wrapped in butcher’s paper. And they were probably the most requested bread for sandwiches.
    My husband and I now live in the Midwest. When I first brought him to NJ, all he wanted was a hard roll, because I’ve spoken of them so often! Wow was I shocked when EVERY SINGLE “hard roll” was like a dinner roll. 😞 We were so bummed.
    Anyway, I’m glad I came across this video! Makes me feel less crazy. 🤣

    The answer used to be Verps Bakery in Prospect Park but they closed in 2019. Callandras in Totowa is good too. The infamous jersey hard roll, is definitely becoming a lost art. On a mission to crack the code myself.

    I grew up right on the line between "taylor Ham" and "Pork Roll" and I know exactly what you mean. Every gas station and convenience store had buttered hard rolls in the AM next to the coffee.
    Have not lived in NJ in 20yrs, and I can still taste those rolls in my mind. Nothing even close to them where I live now. I am resigned to trying to learn how to make them myself at home. Just need to find the correct recipe/method.

      so I grew up in point Pleasant Beach, technically Terrell Taylor, ham territory, we always referred to it as pork roll. And Taylor pork roll was the one that tasted the best, each to his own, though. If you’re interested, search RUclips for a video called Kaiser rolls by my German recipes, it’s the closest I’ve found, you will still have to fill with the recipe some to get close, but it does get it there. You will have to put steam in the oven by spraying the rolls down with water or putting ice cubes in the lower rack of the oven when you cook them. hope this helps, good luck, crumb cake is the same challenge! Another story.

    If your looking for that Jersey hard roll you have to look to Scranton Pennsylvania. National bakery. They're not as good as they use to be but still have that iconic hard roll taste. Get them early when they're fresh.

    Love this video! Keep up the good work, keep them coming. This was better than watching something on the Food Network. In my opinion, the bakeries of Jersey and NYC are unrivaled, and much missed! Also loved being able to share memories with my jersey brethren.

    I. moved out of NJ almost 8 years ago. I just went back to visit family for Christmas and also met with my old buddies for lunch at the Corral diner in Paterson. I had the Taylor Ham, Egg and Cheese on a Roll. It was AWESOME! I do a bit of bread, bagel and pizza baking here at home in NC, but I have yet to seriously tackle the NY/NJ Kaiser roll. I'm looking for recipes to try. It took me almost 2 years to perfect the bagels... almost a year for the pizza. The Kaiser Roll challenge begins!!!!

    It was so sad that you could not find the original Hard Roll in NJ. We lived in NJ for over 60 years and loved, loved the Hard Roll. We now live in South Side VA and Forget About It, you will not find those crusty delicious rolls here. We are also on a quest to bake our own Hard Rolls starting today. We have a few different recipes to try so we will keep in informed on how it goes.

    I lived on the Jersey Shore most of my life and the best Hard Rolls were at 7-11. I now live in South Carolina and a few places have them but not the same. I now bake my own which are pretty close to what I remember.

      @@aleidasuarez I have been using a recipe from Sugar, Salt, Fat, & Booze called the The Long Island Breakfast Special. But wait, I found another recipe that uses Diastatic Malt Powder that makes it rise more. I will let you know how it works out, after the the new year. Only baking cookies right now. I have made the other recipe several times and it is great just not puffy enough. Happy Holidays

    It's Oct 23 and we are starting our own search to prepare for Christmas Even dinner to pair with my father's Beef Soup. One looks promising in Manville others down the shore is the best guidance I've had so far.

    @timkelly there is a supermarket by me where i get a six pack in a bag. It is exactly what i remember as a kid growing up in NY from all the good deli spots from back in the 80's and early 90's. As soon as i get the name of the bakery i will post it here for you. 🍻

    I also grew up in NJ and now live in FL. When I was in the fifth grade I went on my first camping trip. Early in The morning our scout master went out and brought back Kaiser rolls for breakfast. No one outside of NJ/NY understands how good they were.

    I guess the logarithm, although severely late, seems to be working. I was born and raised in Central Jersey and lived in Plainfield and point Pleasant Beach through the year early years of my life. The kaiser roll or hard roll was one of my fathers favorites, and usually an every weekend treat, as well as the crumb cake. having relocated now to the south, it is impossible to find a true kaiser roll as you and I remember them. In fact, I’m convinced that the reason these have disappeared is because of their cost effectiveness, for two easy to get the mass, produced, and shipped to a bakery, then to have that bakery, make them themselves. unfortunately, so much is lost in the translation. The crumb cake has changed as well. It’s for this reason that I have begun making these things for myself, and now my 90 year old father here at home. I think he simply stroking my ego , but claims that my Kaiser roll reproduction is the best that he has had, will probably remembers. The place that we used to get them from was from a restaurant and bakery called snuffy’s in Plainfield. The crumb cake that was the best that I remember was from Moeller‘s bakery in Bay head New Jersey. These are memories that more recent attempts at reproduction have thrown shade. on much loved memories. Even worse, perhaps is the fact that good bakeries are far and few between down here in North Carolina. Oh well, the one constant in life is change.

    😢the old people died and took their hands with them and others destroyed the great ovens I've resorted to making my own Italian bread and bialys.😊 I've succeeded through much work at home

    I attended a prep school in Connecticut and breakfast was juice, cereal, coffee, and a Kaiser roll. The roll was the best part of the breakfast. I live in Rochester and there was one bakery that produced a true Kaiser roll, but it was twice the size of normal sized roll. Then, they discontinued baking it. I am still on a search. There are restaurants here that call a hard roll something that is soft an doughy. You are absolutely right in your description of the Kaiser roll. It is very crusty on the outside and "pillowy" on the inside. The ones I remember also had a cornmeal bottom that added to the chewy-ness. Thanks for providing your search and experience.

    We actually had a bread bakery here in Connecticut that hit the nail on the head.. Perfect Hard Rolls.. Three months later it became a cookie & cake bake shop.. Those magnificent rolls disappeared...

    I grew up in CT eating the exact thing you're describing. I've been it the south since 1977 and haven't had 1 since. I was told by a few bakeries that it takes a special oven that injects steam into the oven while cooking. You might wanna try Waterbury, CT if you get near there. Good luck!

      Through the '80's even, we could get a dozed to bring back to Florida from a Jersey trip. Once our favorite Deli closed, it became impossible to find

    Back in 70’s and 80’s all the bakeries in my area had both soft and hard rolls. The hard rolls were crispy and flaky. Now they no longer have soft and hard rolls. The so called hard rolls these days are like a sponge. I am convinced those good old hard rolls do not exist anymore I

    Tim, Any real connoisseur of good eastern European bread would be impressed by your diligence and knowledge of "the real thing." May I recommend Pariser's Bakery in Baltimore? I do have personal knowledge of this institution because it was started by my great-grandparents!
    I packed thousands and thousands of kaiser rolls after they came off of the machine stamping line and into the proof box, then the hearth oven and into bags to be delivered to restaurants around town. The crunchy shell with the soft and moist inside is the hallmark of the classic kaiser roll.
    When I am in Baltimore, I stop into Pariser's bakery for their classic eclairs and chocolate strips.

    You are looking for a Bulkie (or Bulki) roll. Growing up in Worcester, MA we used to get them on Water St. Unfortunately, those bakeries are no longer there. However, just last week I found that two bakeries do make them: Culpeppers Bakery and Helen's Bakery. Crusty outside, pinwheel design, with or without poppy seeds, light airy texture inside. Perfect! Unfortunately, living in the midwest we have nothing like it anywhere. Still on the search for the perfect recipe to make it myself.

    Dude come to Long Island NY. We have a ton of "real" Hard/ Kaiser Rolls!!! There is also a plethora of recipes on this channel for original NY style hard rolls. They are time consuming to make. I can get them from many bakeries around me as well as many delis. We couldn't survive without our bacon egg and cheese sandwiches!

    As someone whos only been renoved from NY/ NJ area for a little over 2 years, i can sympathize with y9ur search. Though i start to wonder if finding these things is more in our head than reality. We have an idea of something and then when you try and find it nothing lives up tonthe expectations

      THE PRODUCT EXISTED. My family used the for several decades. When I moved to FL in 1974 I had every visitor from NJ bring a dozen.And when I traveled up there I was able to easily bring them back until the '90's. Then it got harder. Now RARE.

    Go to any deli on Long Island and you will find what your looking for, there's no such thing as a New Jersey hard roll, you're searching for a NY hard roll delivered to NJ every morning. Youre funny though lol

    The best Kaiser rolls should not be crunchy on the outside. The best adjective to describe them would be chewy. Dense and chewy. Always with poppy seeds. Keep it simple and spread some Irish butter on them. Make an enormous hamburger and use one as a bun. Toast it lightly and spread some butter on it as well. Perfect for a bologna sandwich.
