Mam why are you adding perungayam for kootu nd milagootal. We in palghat don't add perungayam for these dishes. It is only coconut, red chilly nd jeera. Seasoning done in coconut oil.
S. No need to add Asfotida for milakootal. Just jeera enough. It ll reduce the flavor of jeeja. Moreover Asfotida can be added only for dishes with tamarind

Mami Iam being Keralite Ur not making Moolakudal. It is Porichakuttu. Ur using Asafoetida keralite won't use this in moolakutal . For Moolakutal means any vegetable other than vendakai, cook the vegitable with salt and turmeric. 2 Tablespoon cooked toor dal . 2 Tablespoon coconut, 2 red chili ,1 teaspoon jeera grind masala make a paste put all together in cooked vegetable. And Season with Mustard, Urad dal ,1 red chili, karuvepili in coconut oil. This is only Moolakutal. Please correct. All together Your recipes are good. Take care of your throat. All the best. Reply.
There is a version of neer dosai we make at home, called thengai dosai in which we add green chillis and pulicha tayir to the batter. Do try that. That tastes awesome too.
