It is locally called "SfeeHa" and he called it "SfeeHa Shamiyeh" which means "Damascene SfeeHa". The same will be called "man?usheh" or "manqushe" when it is stuffed or covered with thyme, cheese, spinach, etc. In Syria, we make such distinctions and probably the same is in Lebanon.

I have to disagree with you . Go to turkey and taste the food there. It is not the same as the food in the middle East . We have shawarma they have doner and the Greeks have gyro. Our mezzas are way different than the ones you see in turkey . Lahmajun in turkey means lahm bajeen which clearly is an Arabic word which means the Turks took many foods from the Arabs . So you are mistaken, we didn’t take this food from the Ottoman Empire. The countries of the levant have their own culture and own authentic foods .
@@Lebpride85 I also agree. Go visit and the Syrian now Turkish territories (what Syrian call occupied), and you will see the difference in dishes from main Istanbul and others. Aleppo's famous food cannot be downgraded to being Turkish! After all, it was all Greater Syria, and people do interact, esepcially in terms of food. I am glad that halawet al jubn is not considered Turkish also haha
Ok for example kibbah is from Syria/Aleppo, fita is from Syria/ Damascus, fatosh salad is from Syria/Damascus, kanfia is Palestinian , falafel is egyption, tabaloua is lebanase, hummus I think its egyption or some Lavant country, and much more. Turks took food from arabs like kibbah, kanfia, and hummus. Arabs took food from the Roman's, the French, the Greeks, the Is Persians, Spain moors returning from the middle east, and the ottoman empire. Middle Eastern cuisine is rich bez they learned from different civilizations. Turkey took foods from all over the areas the ottoman empire occupied as well. In my opinion middle eastern desserts is much more Delicious then turkey. Turkey doner is great but arabs mastered the shawarma. Garlic sauce with chicken and beef with tahini sauce is the true evolution of doner. Turkeys invented doner kabbab and arabs evolutionized that sandwich

Turkish food tastes very bland just compare the shawarma and grape leaves etc.. enough to see a huge difference.
