- I FORGOT TO MENTION HOW LONG THIS BAKED- It took exactly 1 hour and 20 minutes! Just keep an eye on it and check the temperature. It needs to be at 165 degrees :)
It's been TOO long since I've uploaded a video! I've really missed you all!
Today I'm sharing the easiest roasted chicken recipe! All 3 of my kids love it, and I hope your family does too!
1. Preheat your oven to 425. Rinse your chicken very well and dry with paper towels. Place onto a plate (over paper towels) and put some salt on the skin so it draws out any extra moisture. Set aside.
2. Prepare your veggies. Make sure they are all cut about the same size. If you use garlic cloves, don't peel them. Place all the veggies in a large roasting pan and drizzle with oil, salt, and pepper.
3. After your chicken has had a few minutes of sitting with salt on it, dry it again with paper towels. Put the chicken on the veggies.
4. In a small bowl, mix together one stick of salted butter (softened; if you are using unsalted butter, add some salt to it) and all of your spices/seasonings.
5. Loosen the skin of your chicken. Put your fingers under the skin and break apart the tendons. Be gentle, but this is so easy! Put a good amount of the butter mixture under the skin and spread it out evenly. Spread the rest of the butter all over the top, legs, wings, etc.
6. Bake your chicken around an hour to an hour and a half. This all depends on how much your chicken weighs. Check on it often with a thermometer. The internal temp. should be 165 when you pull it out. Baste your chicken with the juices that collect at the bottom of the pan every 30 minutes.
7. Let your chicken sit for about 15 minutes before cutting into it.
