Why not make a smaller batch and pour it on a silicone mat? Wouldn't it be much easier? Or pour into a deep pan that is lined with parchment paper. Just a thought. That looks delicious!
It's a different technique, if u don't stir it, it become a simple syrup, and if u stir it, the sugar will be caramelized like in the video, hope this help
