Just got the deflector plate today. I have a old country Pecos I just bought. Fire brick lining the fire box with stack extention. Very happy with it. I did a test run to see where to install my temp gauges and took a random pic of the temps after getting a coal bed and stabilizing temp after an hour (no meat on). Temps are almost even all across the grate within 7 degrees. Ready to test with a full smoker of meat!
firebox door closed with damper open, and stack damper open. however i do mess around with both when cooking and am looking to upload a video soon with results.
@TheSmokinRedneck. Just got mine for the brazos. Do u just set it against the lower grate bracket near the firebox or do u have to get it as close as possible. Couldnt tell with the pecos video Thanks
So for the char griller XD I have one designed for it, but in order for it to work properly it requires heavy modification to the smoker For example, there’s this tiny little length of metal over there near the fireplace it has all of the holes in it so yeah that thing needs to come out. It is not fun to cut it out of there. However, when you do cut it out, it is the most glorious thing ever because the smoker works amazingly well with the upward deflector plate .
