Australia’s best oysters are Sydney rock oysters. Perhaps best sourced at Merimbula. They take three times longer to mature than Pacific oysters but the flavour you get is worth the wait.
I soak my calamari in milk overnight to tenderise and don’t overcook it. Only takes a couple mins in hot oil depending on the size. Can also use kiwi fruit if your a fan of it. Milk is cheaper.
