If you know enough about accounting systems and have enough access, you can figure out how to scam the company for an insignificant amount to them and a significant amount to you. More generally, companies want to avoid “we trained you for 3 months, but you now found a better job and our investment in you has been lost.” …I agree that it’s not a great situation and it can be an excuse, but sometimes it’s a legitimate issue.
