Thanks for watching! I have found the same with many game birds that are on their feet all day, turkeys, pheasant etc. The best way I have found is not to remove it until after cooking. We slow cook most leg meat and sometimes it takes many hours. We slow cook our turkey legs for 10 hours sometimes. It then pulls off the bones and is delicious! The only thing I can think of is using a fillet knife if you want to remove it raw. Hope this helps!

You can't cut a bird like that, the liver, heart and goiter can and should be used for food. We must love nature, this is a gift from God.
