Oooooh....looks soooo yummy! I never knew you get purple potatoes! We dont get them in South Africa. We have the orange and the red skinned one which is actually white inside..What can I use instead of that? Beetroot perhaps?
beet root sounds like a good idea, although yours will probably turn out more red than purple. Also, I suspect you might need to add more starch to compensate for not using the potatoes.

I personally think sago powder would be more sticky than cornstarch, but try it out, maybe it will surprise you :)
