    Fun fact, intestines are actually very healthy to eat due to being the first line to absorb nutrients in the body.
    It is high in protein, medium in fact and extremely high in vitamins and minerals, like Zinc that help the body function.

    Looking at that red bucket bring back memories. When I was 7 months pregnant with my first child. I wanted chitterlings so bad that New Years. My mom told me she would cooking them if I clean them. I got in that kitchen and stood over that sink from about 7 or 8 hrs. cleaning 5 buckets of chitterlings...lol... We had chitterlings, blackeye peas,collard greens, candy yams, rice and corn bread. Cleaning them chitterlings was a small price to pay for that meal.

    While I may not be quite ready to jump on board the intestine train, the collard green tortellini looks delicious! I like this chef and I liked learning about her cooking philosophy. Great video!

    My wife is a Thai farmer whose family has lived by eating insects, what the forest grows and yes, all what this lady has stated. Its very nice to know that people are still proud of their poverty & simplicity. That makes for great content. Without a doubt, even though not a very visually appealing video (the raw intestines), a very powerful video that teaches us all the realities of life.

    Latvians also used intestines and everything they were allowed to have and we also had to be creative because we too were kind of ''slaves'', but under Serfdom. There was torture at times, but mostly we were more privileged than black folk in US or people in other countries. Anyways, this might be the reason why so many people from different countries will see such food as something familiar and understandable. What counts is the cultural background and the work.

    My best friend and my aunt shared a pot of chitterlings one time at her home. They got slices of white bread and hot sauce and just sopped them up. I couldn't ever get over the smell of the cooking process, but boy was I envious of how much they were enjoying those chitterlings.

    Yeah, intestines and organs are definitely not throwaway cuts in most of the world. That's a very American way of thinking. Glad soul food makes use of a better variety of cuts.

      Well for most of Colonialized American history there was a huge amount of space compared to people. So having cattle was not an issue. And because wild lands were not far away, there was a lot of game animals.
      So there is a history of a meat rich diet.

    Respect to this elder for educating while coming these down south roots of cooking. I was sold when she said" 10 pounds turn into 5 pounds." That's a fact. I'd like to see tripe. The lining of the cows stomach is so good- if cooked properly 😋.

    I want her to be my grandma. Mine used to make chitterlings sometimes and they stunk to high heaven and I refused to eat them. But I’d try deborahs.

    Collard greens get a bum rap, they really aren't often bitter. Always, always remove the stem too, just tough and fibrous.

      It’s a personal thing and I’d never do it in a restaurant menu, but I enjoy the bitterness of greens and I enjoy that after hours of cooking the stem maintains its crunch and chew. I could I think subsist upon hardy greens braised with ham hocks and sautéed with garlic, ginger, onions and mushrooms. Nothing else makes me as happy.

    No shay but you're supposed to be wearing gloves and the bracelet you have on kept touching the food but all that food looks amazing

      Gloves are rarely used by professional chefs. This is not a McDonald's where the food sits out and people don't know how to wash their hands.
