Just wondering about waygu… I, too have seen on tv and it is highly marbled. Maybe the burger fried a bit in the rendered fat on the flat top giving it that crispy texture. Our small town farmer’s market has a vendor selling waygu. I spoke with him and inquired about price. Their 8 oz strip steak was $100! How many kinds of waygu are there? Is it like Angus nowadays where it’s almost as if your cattle have any black markings you call it Angus? I still think a choice steak or chuck burger from a well raised, well fed cow tastes delicious! But I’m a bit old school that way. I do understand different breeds produce tastier meats, but there seem to be so many buzz words to sway opinions. Wishing you the happiest of New Years !! Woof to the pups. 🐾🐾
I think you are correct, about the fat frying up crispy like that. That's what we were talking about, as well... that it could be due to the marbling. Yes, I'm like you, in that I think a good quality meat tastes delicious, regardless if it's "wagyu", "angus", etc. We were just curious about this wagyu, and if there was really that much of a marked difference between it and the others. And we figured the price wasn't much worse than what you would pay for a burger anywhere around here, so we might as well give it a try. It was a good burger, and once we started eating it and looked on the inside, it was cooked correctly. I think her seeing the outside first, just kind of threw her for a loop and she thought they had overcooked it. I'm not exactly sure how many different kinds there are. I know of the Japanese and the Australian, for sure. Hope you and yours have a happy and blessed New Year!
Maybe you can try a wagyu burger somewhere else and see how it compares to this one. We haven't tried it but have seen other people do reviews on it. Glad that it was a good experience overall.
That would be a good idea. This is the only place I've actually seen it on a menu, but I'll be watching at other places, as well. I'm sure they're out there.

Yeah, this was just a little different texture than we're used to in a burger. It wasn't bad, but just different. Kind of crispy.
