After they start living on earth and the robot overlord AI was overthrown there isn’t much else to work with. Unless you introduce plot devices so different from the first movie the second film would no longer feel like sequel. I’m sure it could be done but the message of global warming and healthy food was enough.
I don't think they will stoop to the level of "Megamind 2". Even if it isn't as good as Wall-e, it is hard to beat "Megamind 2" in terms of general badness. It has a 9% critic rating and 6% audience rating.

Wall-E, Up and Ratatouille don’t really have a lot of potential for a sequel and had a great ending. I also feel like some older Pixar movies can work with a sequel but I think they are too late to revisit them
