    What gave them a bad name was the institutional practice of boiling them to death: soggy, bitter and smelling of sulphur.

    OMG! What a coincidence! After 61 yrs of hating the bitterness of brussel sprouts and refusing to eat them my whole adult life, my daughter-in-law cooked a skillet full of those despicable little green orbs this past Thanksgiving! I was confronted with that dreadful day of reckoning: eat them politely and risk public humiliation when I involuntarily gagged into my napkin and forever hurt her feelings ( and alienate my son) or slip them under the table to the dog ( he'll eat anything... once. ) But I was pleasantly surprised, they were DELICIOUS! For all the right reasons you outline in this video - she was the first one ever to cook them right! Deep golden brown and tender! My new favorite vegetable! Thanks for explaining the food science behind that Thanksgiving day miracle. I can go to my grave absolved of my irrational fear of Brussel sprouts. 🙄😏🤔😉😎

      I have hated Brussel sprouts for 63 years. Next time I see them on sale as individuals, I am going to pick up 2 or 3 and try this method of cooking them. Thank you for sharing your experience.

      I'm impressed that you care about your DIL's feelings! :-) My MIL actually spat a beautiful cauliflower soup back into the bowl because the 1/2 tsp. of white pepper in the entire pot (not the bowl) was, and I quote, "Burning like fire." No, I did not add anything extra!

      This is what happened to me. I thought they were terrible when I was younger. I'm 30 years old and roast them daily. So good.

      Isn't it amazing how some American foods were so terrible not so long ago. How hard was it to find a better way to cook them? Glad to see the culinary culture revolution going full speed ahead!

    I grew up in Germany and the vegetable stereotypically hated by children was spinach. I always liked Brussels sprouts even when I was very little. You could chase me around the block with mushrooms (love them now) or raw tomatoes (ditto) but I loved the sprouts, still one of my favorites. They’re called “rose cabbage” in German, by the way. Seems very poetic to me.

      I'm in the US, and I never liked spinach the way my parents made it. It was a dark green glop, like wet seaweed, and bitter with an awful mouth feel. Then with the health food movement, I had it raw (or very slightly cooked) and like it a lot.

      Super oily spinach in sautee is amazing. Just FYI. Drain oil post and do some light seasoning. Sea spinach pairs a little better but you have to go to asian markets.

    When I was FIVE years old my Mom took me across the street to the Benson's household - they grew fresh sprouts in their garden. Mr. Benson was Swedish and had whipped up a pot of creamed brussel sprouts - I can still remember how much I enjoyed them even as a little tike - must be why at 59 I CRAVE them constantly.

    I've always loved them - since childhood - just plain steamed so learning to roast or pan-brown them adds a whole new dimension to my culinary existence. My favorite veg as a kid, btw, was asparagus - still is, and I'm now 62!

    When I was a child whose mother forced her to consume yucky Brussels sprouts, I swallowed them whole!!! When I was in my early 20s, my mother found a new way to cook them--roasted in the oven with butter, olive oil, salt, pepper, and garlic--and they tasted like candy to me. My sis and I couldn't stop swiping them from the pan while the rest of the meal finished cooking! I've not tried making them in a skillet. But if Dan says it's the best, I will try!

    I added my halved Brussels sprouts to a cold cast iron skillet, squeezed fresh lemon over, and heated up the pan to medium high. Once heated and lemon juice sizzling I added 3 T of evoo, lowered to medium, and covered it. BEST EVER Brussels sprouts. Thank you Dan!! Amazing recipe and is far superior to oven roasted or, gasp, boiled. Love the W-E-D? episodes!!

    Great Video!
    Another really great way to cook brussel sprouts I discovered is:
    - Cut sections along the root and then
    - Toss in oil and salt, and put it in Air Fryer for around 10-11 mins with 350F.

    I use basically the same method but I lightly saute some chopped garlic is a 50/50 olive oil, butter mix. Once the garlic is LIGHT brown, I remove it and put aside for later. Then in go the brussels, cut side down. Saute with a little coconut aminos and Worcestershire sauce. Towards the end, in goes onion powder, garlic powder, sweet paprika, s/p and a good portion of nutritional yeast. Cook on low for a little while longer, add back in the chopped garlic and serve.

    I love 'em whole, halved, in the oven, or in the stove to roast. It doesn't matter to me. I ate them even as a child.. They're delicious!

    Dan, totally dig your posts.
    I as a child loved all of those veggies you spoke of. And it was only in the last 20 years (I'm 64) that I learned to roast them. Love them that way because of the Browning. I am now convinced that the way you pan fry them is how I will do them.
    PS, I also love frozen baby Brussels too.👍

    Hell yeah! I'm with you on this one. This recipe is absolutely the best way to eat brussel sprouts. I hated them as a kid, but that's because my parents didn't know how to cook. This is the joy of becoming an adult!

    Adding to comment below, just made them and ate every last sprout. Cooked in regular olive oil, served with Maggi Yugo & soy. Little bit lemon zest grated over top. WOW!! The nuttiness of caramelization was reminiscent of some of best state fair food, only healthy. Made on Simply Ming induction cooker in T-fal 12" skillet. Done in 13 minutes. I did not cook to degree of perfection you did, but I will do better next time...soon.

    Hi, Dan! I have a different take on B S. I loved them as a child, along with asparagus, broccoli, and spinach. Still do to this day! Mom would make a pot roast with taters, carrots and onions. All I would eat were the veggies. She would cut a small piece of meat and tell me I could not leave the table until I ate it. I fell asleep at the dinner table quite often before she gave up. I know most people will think I'm loony but I still limit my red meat to burgers and sausage. Just don't like steak, ribs etc. Seafood and chicken works for me. Keep up the good work. Love your take on things.

    Made these with salmon just now and they're absolutely delicious! I threw in some chili & garlic and let it all get nice and toasty.

    My great-grandmother shared her technique and recipe. Always choose tiny Brussel sprouts as opposed to large. Then, cut them in half and snip out center (v shape). Then, placed them on a flat stone (like those used to make pizza) that was brushed with olive oil. Finally, broiled them in the oven until they turn brown, sprinkle with salt and pepper and tiny dollop of plain yogurt.

    Long time fan of Brussels sprouts, but always roasted them in the oven. Tried this method last night for the first time, and it worked like a charm! I made the lemon juice and pecorino version, but I couldn't resist adding some bacon lardons, because... bacon. It was delicious! Thank you!

    My mom just made broccoli. I don't hate broccoli, but I'm always reluctant to eat it. I took 1 bite and wow! I'm asked how she made it. Oil, salt and pepper... And onion powder in a skillet. Soooo good. The thing is they looked very brown - now I know why they tasted so good.

    I always loved brussel sprouts. Hearing they taste bitter is a first for me. My mum used to cook them in a pressure steamer, with potatos in the water at the bottom and the sprouts in a sieve above. The always had this sweet and melty taste they were absolutely delicious!

    I cook them in the oven. Deep frozen into a non-stick vessel for 30 minutes at 200C. I start with a cold oven. I put the cooked sprouts onto a soup plate and add lots of butter and fresh ground pepper.
    I love that taste.

    Dan, I don't know if you'll see this but made sprouts for New Year's dinner. Though not a sprouts-phobe to begin with, the new cooking technique turned out amazing with macadamia nuts, dried cranberries and balsamic dressing Yum. Thanks for the inspiration!     D'oh! You just explained why this recipe, which is so simple, makes Brussels sprouts taste very different than when sprouts are cut - and people who say they don't like them will eat this:
    Remove the leaves from 1 lb large Brussels sprouts - tedious, but worth it for the change of taste
    Cook on medium-high heat with 2 to 3 cloves of crushed or sliced garlic and a little olive oil just until wilted.
    Cover and cook on low heat just until soft. Stir / mix with tongs once or twice to cook evenly.
    Toss with 1/4 tsp red pepper flakes.

    YES! The brussel sprouts we were served were canned or boiled beyond recognition. As an adult, my brother decided to give it a shot. YUMMY! He likes to experiment so he has prepared them many different ways. His favorite is bacon and roasted. Today I will try this method. Quick and easy. Thank you and Happy Christmas/holidays to all.

    My favorite way us to cut them parallel with the base, rather than perpendicular into ribbons. Sautee with a little bit of butter, bacon and onions and then toss dried cranberries in at the end. Delicious

    I have always loved Brussels Sprouts - but as a Vermonter growing up in the 60s & 70s, I ate pretty much everything put in front of me. Beet greens, dandelion greens, tripe, venison, partridge, fresh fish of all kinds, salmon pea wiggle, etc., etc., etc. I was not a picky eater!❤ I am eternally grateful that I was exposed to a wide and varied diet. There is virtually nothing I won't eat or at least try (sushi being one exception!😊)

    Brussels sprouts were a family favorite and a standard at home growing up. Loved them as a child; still love them today and I don't even need char or a lot of fat. Obviously delicious roasted or sautéed with bacon but to me they're quite tasty just braised in stock and hit with black pepper and lemon. 👍

    Maybe I'm weird. Always loved them. All the brassica family. Broccoli, cauliflower, cabbage, Brussels sprouts. Kale.
    Good food, great flavor and texture. Satisfying and fills the gut when times are lean.

    I've always loved sprouts I had when I was a kid, but my Mother was a great cook and she specialized in Asian (Indian specifically)food. So her method was very similar to the one presented here. And so that is how I have been doing it, with a curry sauce..

    Belgian here, from the land of all things Brussels. Great recipe but you forgot the secret V-cut getting out the hard bitter core at the bottom of the sprout. Other than that all you need is maybe a bit of bacon.
    Other style is cooked, cut up and mixed into a nice mashed potato with maybe a veal or pork cuttlet, or any meat really and a good pan sauce with some butter. Very similar to green endives in this way, a bit stronger than the spinach version but still a children's favourite
    But cut out the solid white root core at the bottom center. It tastes like grass and it's tough, while the outer leaf layers are sweet, herby, earthy and buttery.

    Whether stovetop or oven roasted, they are wonderful tossed with crispy bacon, very finely grated garlic (use a rasp) and just a kiss of grated Parmesan cheese. Yum.

    ive seen that leave it to beaver episode, but I loved them. boiled, dipped in some balsamic vinegar with a little butter they were my favorite veggie.

    My cats love brussels sprouts, cabbage, spinach and MUSHROOMS. Oh, can't forget the seaweed. That's another story.

    As a kid I used to eat frozen brussel sprouts frozen, like candy. I loved the little frozen ice layers in them. I also, really love grilled brussel sprouts in a pan. Yum! ✔️

    Ive always cooked brussels sprouts cut like this and in a skillet - and to this day I thought I was BURNING them. Gotta love science. Thanks Dan :D

    It also depends on the time of year you buy them. Sprouts finished off in cold weather, before harvesting, are sweeter.

    I also hated them as a kid and didn't understand why my mom liked them. I have now had good browned Brussels sprouts for a number of years and really enjoy them. Some nice bacon pieces cooked in with them is delicious, too (the Southern vegetable trick!).

    My method is to place uncut brussel sprouts into a fry pan with some chicken broth with the level up to their middle. Put the lid on and poach them at medium low. Check them with a fork to determine their tenderness and when they seem to be very tender, place a salmon steak or filet into the middle of the pan and put the lid back on. You should season the salmon with salt and pepper at the very least. You should also add what seasoning you prefer to the salmon before cooking. The fat from the salmon cooking with the Brussels Sprouts are a perfect combination. I like the Brussels sprouts to be melt in my mouth tender. Ground black pepper is perfect here. Salmon and tender sprouts together in the mouth is excellent.

    Slice, saute in butter, salt, sear the faces, finish with lemon juice. Garlic powder helps too.
    (You want emerald green leaves with caramel browned faces. You should have just enough liquid to keep them moist. Conveniently enough I also learned this from the old tales of how much people hated brussel sprouts; I bought a bag of them one day and was determined to find a way to enjoy them. I started with boiling but accompanying with a thin sauce, it was good but lacking. I made a hash from them which was good but tedious to make. This was my 3rd attempt and since, its been my go-to if showing people how to cook them. Not one complaint to this day, im really glad others have pursued the same method c: )

    Hi there, I really like to par boil my sprouts before hand and for the large ones cut in half but the small ones I leave whole for even cooking. What’s really good is after seasoning, I’ll finish them on the grill. The smokey flavor is amazing.
