I agree with other commenters that the garlic is too brown. Brown means bitter which some people like, just like those people who like bitter broccoli rabe. Those cooks don’t blanch and they use the stems which increases the bitterness. I am one of those old time Guidos that usually don’t do no stinkin’ blanching! Occasionally, I get a batch of Andy Boy which is a little too bitter for me. But Dude, watch your garlic better!

I thought when you pulled out that box of olive oil was funny. This is the American Italian version that does not exist in Italy. The original version is from Puglia Italy and it is made with orrechiette. No sausage and a garlic clove is added to flavor the oil and then removed, so very little to no garlic is used. Americans use 100 times more garlic than Italians in Italy.

  • @davidayn2853

You seem to cook like a good Sicilian or Calabrese boy. You use the Corto EVOO in a box which is an extremely good California oil. And you made me so hungry I wanted to yank that forkful of rapini and sausage right out of your hand. It looked so damn good. I really like the way you cook...such southern Italian flair, all those spicy chilies. Yum yum.

Loooove Rapini annnnd this video. I'm so happy I came upon it. You did a great job of this. It kept my attention and your delivery, heart warming. I have to tell you though, I do quickly soft boil my rapini (stalks first) before I saute it, only because, I loooove the broth that is rendered so I can dip true bruschetta in it's broth. Rapini is not easily found where I live in Atlantic Canada!! Today, I just happened to go to a grocery store, I rarely go to, glanced around while in the produce section and BOOM …. there was Rapini … $4.99 a bunch. I bought them all!!! $35.00 later, I was a happy Nonna. hahahahhaaa. I called the store when I got home and they have 4 bunches in the cooler that I will pick up and their next order comes in next week. I'm on it! I definitely have to research how to grow rapini in the Maritime climate. Thank you so much for your wonderful video! It truly brightened my day! All the best to you and yours always from the east coast of Canada.
